Seasonable Pickle Recipes.
The time has come when pickles must
be "put up" for the winter and every
housewife will appreciate these recipes,
which are tried and true. Be sure to
toiiow the directions exactly and you
cannot help but meet with the most
llattering success.
Sweet Tomato Pickles.
Seven pounds of ripe tomatoes scalded,
peeled and sliced, three and onetialf
pounds of brown sugar, one tableipoouful
of ground cloves, one tablespoonful
of ground cinnamon, one teaipoonful
of mace, one teaspoonful of
lalt, a good-sized red pepper chopped
ine, two-thirds of a quart of good vine;ar;
tie the spices in a thin muslin bag.
3oil the pickle mxture for one hour.
Seal in jars. This is very fine.
Indian Pickles.
wo ounces or curry powder, two
rnnces of ground ginger, two ounces of
nu8tard, one-half gallon of vinegar. Mix
ogether in a jar and then cover. Stand
n a warm place for a few days. Put
jmall cucumbers, cauliflower and small
>nions in a medium brine?let stand
'orty-eight hours, then scald a minute
n.the brine. Drain and dry in a cool
)ven; then put into vinegar. A red pepper
and a piece of horseradish Improves
t These pickles will keep for years.
Chile Sauce Which Is "Extra Fine."
Thirty tomatoes, scalded, peeled and
:hopped tine; ten onions and six green
jeppers, also chopped fine; five cups of
jood vinegar, three tablespoonfulB of
jalt, twenty tablespoonfuls of sugar;
boil one hour. Seal tight while hot.
Mustard Pickles.
Soak the cucumbers in salt water for
twenty-four hours. Drain off and scald
n weakened vinegar. Take one cup of
arown sugar, three quarts of good vinegar,
six tablespoonfuls of mustard, onelalf
ounce of turmeric, two-thirds of a
:up of flour, one-half teaspoonful of
:ayenne pepper. Mix all together and
:ook well, adding when nearly finished
)ne-half ounce of vinegar and one-half
)unce of white pepper. Add to the
:ucumbers, while still hot, any desired
luantity of onions and cauliflower previously
scalded in a weak brine for three
minutes. SeaL
Sliced Green Tomato Pickles.
One-half peck green tomatoes (unpeeled),
one pint sugar, one and one
nan pints vinegar, one tableapoonful
cinnamon, one tableapoonful whole allspice,
handful whole cloves, little nutmeg
and dry mustard, two or three
Bmall green peppers, three large onions.
Boll one-half hour, or till tender.?

Fruits for conserves should be selected
when they are Just ripe, never
over-ripe, and they should be of the
first quality. Cook in a porcelain-lined
or aluminum vessel, and use silver or
wooden spoons. Granulated sugar is
the best for all conserves. Citron conserve
is the one most used, for it forms
i part of fruit cake, plum pudding,
mincemeat and many other dishes.
Conserve of Ginger.
To conserve ginger, make a syrup of
two cupfule of sugar and one of water;

drain, cover witii some of the syrup and
ooil slowly for one and one-half hours,
lake up, drain, and wnen cold dust with
sugar, dip again into the syrup, cool, roll
well in the sugar and pack in jars, with
sugar sprinkled between the layers.
Conserved Cherries.
There are lew more tempting morsels
than conserved cherries. They are usually
made irom tne sour red varieties,
tnough tne white cherries are nice conserved
in syrup, to serve on angel-cake
with whipped cream, for candies, etc.
They are all prepared in the same
way, by lirst removing the seeds carefully
by hand, in order not to disiigure
or break them?cf course, only perfect
fruit should be selected; scald until
tender, drain and return to a thick
syrup made of one-third juice and water
and two-thirds sugar; cook slowly for
an hour, placing an asbestos mat under
the kettle, so it will not require stirring
and to prevent from sticking or scorching;
pour Into glass jars, cover with the
syrup, and seal; or drain from tne syrup,
place on platters, cover with sugar
and stand In the sunshine. The following
day moisten with the syrup, again
cover with sugar, and the third day
pack into jars between sugar.
AWARDS CONTRACT FOR PAVILION.
Needs of Catawba Ex-l'atlents So Great
That Association Must Build at Once.
So imperative has become the need
of providing quarters for patients leaving
the Catawba Sanatorium under the
six months' rule, that the Catawba Relief
Association on Monday awarded contract
for a new pavilion at Catawba, although
sufficient funds are not in sight
to complete the work.
Mr. Chas. E. Brauer, president of the
Relief Association, was in Richmond recently
and expressed his confidence that
the Association would receive sufficient
money to meet their obligation.
"Health work in the State, said the
Commissioner of Health, "has witnessed
no finer example of sourage than this
action on the p.irt of Cie Catawba Relief
Association. They have raised hbout
*3,000, and will need much more before
they can pay the contractor in full. But
the officers of the Association felt that
something must be done to care for
these who otherwise would have to leave
the Sanatorium, and accordingly they
nave undertaken to raise this money,
'ihe contractor was willing to accept
their promise to pay, so they have assumed
this obligation."
The new pavilion will be a haven for
the patients who otherwise would have
to return to homes where the conditions
are not so favorable for the cure. It
will be provided with proper plumbing
and sewerage and will afford quarters
to a number of consumDtives. The de
sign of the pavilion is similar to that of
the most modern buildings erected by
the state and affords every facility for
the treatment of the disease.
"The building will meet the needs of
the patients, at the lowest possible figure,"
said Dr. Williams, In explaining
the details of the plan. "If the people
of Virginia will contribute the rest of
the money needed for this work, they
may rest assured that it is wisely invested
in a plant that will save human
life and reduce suffering."
