It is a time when people used to
dose toe wuole family witli a good,
powerful medicine to clear the way lor
luller activity aud health. A free use
of fruit serves the same purpose in a
safer and more agreeable way. It is,
however, just the time of year when
fresh fruit is least within the common
reaeh. The stores of fruit, canned and
preserved home, are apt to be running
somewhat low as spring comes on.
Tnere are always dried fruits to fall
back upon, aud these seem of most woi to
just at this season. Domestic dried (
fruits are all good in the spring; the ,
homely dried apple, even, and the ricn- ^
er peach and apricot commercially offered;
also berries may sometimes be j
used in this form. t
But more particularly this is the best (
time to use freely the foreign dried
fruits, such as ngs, uates and tne use- J

duction. 'inese are all dietetically val. .
uable, and capable of a variety of treat,
ment in turning them to account for the
Lome table.
In cooking the dried fruits should all
be soaked for several hours in cold water
to cover, then simmer gently until
the pulp is tender, but not overdone,
'niese are t.o exceptions to general rule
tnat the development of flavors and tex.
ture depend largely upon the cook.
'1 he amount of sugar used, is, of course,
varied to suit the fruit and the taste?
in some cases it is a good plan to make

cooked. With prunes, a little lemon
or candied orange peel helps decidedly.
A few raisins simmered with prunes
make a pleasant variation, say half a
cupful to a pint of prunes.
The various nuts, English walnuts, almonds,
pecans or hickory nuts,, combine
well with these dried fruits, and many
persons consider nuts an admirable sub.
stltute for meat. Without claiming to be
reformers in diet, it is well to remember
that these dried fruits, especially figs
and dates, are not merely "little extras,"
but highly concentrated and "staying"
food. Ab substantials, they may be eaten
with the various cereals, rice, cream
of wheat, or with macaroni and sago or
tapioca. Either figs or dates, chopped,
moistened with a little lemon juice and
spread upon whole wheat or graham
ureuu, maKe aencioug ana nearty sandwiches.
Chopped nutB can be mixed
with the fruit with satisfaction.
Date bread is no novelty, but still
something a little out of the common, always
enjoyed by children and others
who are fond of frugal fare. It serves
n.cely as a little treat to make a birthday
or holiday. The dates are stoned
and cut in halves and added to the
bread (either white or brown bread),
before making it up into loaves. Or the
simple rule may be followed: To a pint
of light wheat sponge add two tablespoonfulg
of sugar, a saltspoon of salt,
and graham flour to make a stiff batter.
Beat thoroughly and mix in a cupful of
stoned dates. Put into a deep bread pan
let It rise well, and bake.

simmering. It may be run through the
food chopper or left whole according to
:aste. Make a plain lemon jelly after

a little jelly into tbe form and let.

nto a jelly by adding a little gelatine.
Another fine dessert of a simple kind
may be made by pouring the fruit, with
;he syrup, over a split square of sponge

cream.
