varied to suit the fruit and the taste?
in soni6 cases it is a good plan to make
a boiled syrup separately, and add as
much as required when the fruit is partly
cooked. With prunes, a little lemon
or candied orange peel helps decidedly.
A few raisins simmered with prunes
make a pleasant variation, say half a
cupful tp a pint of prunes.
The various nuts, English walnuts, almonds,
pecang or hickory nuts,, combine
well with these dried fruits, and many
persons consider nuts an admirable sub.

that these dried fruits, especially iigs
and dates, are not merely "little extras,"
but highly concentrated and "staying"
food. As substantial, they may be eaten
with the various cereals, rice, cream
of wheat, or with macaroni and sago or
tapioca. Either ligs or dates, chopped,
moistened with a little lemon juice and
spread upon whole wheat or graham

Date bread is no novelty, but still
something a little out of the common, always
enjoyed by children and others ]
who are fond of frugal fare. It serves

before making it up into loaves. Or the j

taste. Make a plain lemon jelly after I
any good receipt, and when the fruit is I
cool, mold as with fresh fruit, by pour- ]
ing a little jelly into the form and let
ting it set, then add the fruit and envoi

may be made by pouring the fruit, with V
the syrup, over a split square of sponge 1
or wheat cake and covered with whip- A

Either dates or prunes may be used
far a dainty whip, the dates lirst stoned
and chopped, then cooked to a smooth
taste. The prunes, after stewing, may
be put through a press or colander. A
cupful of the prepared fruit, With a little
lemon juice and two tablespoonfuls
of powdered sugar is mixed with the
whites of four eggs and beaten to a stiff
froth. Pour into a buttered pudding
dish, set in a pan of hot water, and bake
in a moderate oven about twenty-five
minutes. It may be served with whipped
cream, or with the yelks of the eggs
made into a boiled custard with a pint of
milk and sugar to taste. With the whites

lemon juice and sugar, this mixture
