Caie of Food.?To prevent the spoiling
of food the first requisite is perfect
cleanliness in the place of storage.
Secure this, not only with soap and
water, bin with tresa air, dryness, whitewash,
sunshine, and cold, adapted by
common sense. Keep the cellar dry by
the use of unslacked lime placed here
and there 'in large dishes. This lime
will take up the moisteur until it becomes
slacked, then renew the lime.
Preserve the slacked lime for use in
the garden. Mixed with manure and
the rich soil of the garden, slacked _
lime, properly used, neutralizes the
acids in the compoet and "sweetens
growing things in the hillr"?tomatoes,

sweetening is done by the elimination
of acid.
Bight, ventilation and low temperature
will retard tbe growth of most
molds. Froui the standpoint of house- "
hold sanitation and cold storage bacteria
are the most important of the
three micro-arganisms here considered.
I'ney re-quire at least 25 per cent of
inoisteure to thrive, and the high temperature
of 80 to 90 degrees, most of
them are killed by 150 to 160 degrees
of moist heat. Ihe frequent repetition
of boiling temperature applied to some
bacteria 'is necessary to kill the spores.
But only such focds as are in the freshest
and best condition. Succulent fruits,
raw meats, meat products and particularly
milk, are especially subject to the
inroads of bacteria and should be there- j
fore given never ceasing attention. Conturne
them as soon as possble after pur- j
chase, or subject them to the following
treatment: Thoroughly scald or boil ji
toe utensils in wnicn tne food Is to be y
placed; the temperature best suited to
tbe keeping of food is usually as near
the freezing as possible. Meats, iish, g
fowls, and other highly putrecuble j
toods are perfectly kept in cold storage \
for years, and a good ,ce box will keep
them for the household several days,
when the box is dry and clean.
From the fact that bacteria cannot ;
thrive where the water content of
tood is below 25 per cent., many kinds
of food are preserved by drying. Often
in combinations with salting and amok- :t
ing, this is applied to tish, meat, fruit
and vegetables. Food that Is boiled
and then canned, while yet 'hot, if per- '
fectly sealed, will be safely preserved
for any length of time, if reasonably '
cared for, as to dryness and temperature.
In some foods there is no danger
from the hacter'j. in the early stages
of their action. Meat, for instance, is
ripened -by bacteria action and the !
"gamey" taste so much desired by many j
is thereby obtained, assisted by the ]
ferments normally present.
Food often becomes dangerous be- i
fore it shows any outward signs of decomposition.
The bacteria may, as they
feed upon the proteids give off sub- w
stances known as ptomaines, some of <"<
which are virulently poison to us. It
iB not known under w'hat conditions
these poisons are developed in food.
The safe rule is to eat sparingly, or not
at all, of foods that are liable to such
changes In hot weather, and especially
where the methods of preparation are
not known, or where the serving of
large number of persons at the same a
