Warming up this Winter
with Meathall &
Collard Green Soup
Azure

Fun, Delicious
and Festive
O h baby, it's cold
outside and the best
way to get warm this
January is with a hearty
bowl of Meatball & Collard
Green Soup. This wonderful
dish is made with Italian
meatballs and tender ditalini
pasta nestled in a rich broth
flavored with basil pesto.
With all of this deliciousness,
this soup will definitely feed
the soul all winter and bring
you a little luck the whole
year through.
Meatball & Collard Green Soup
4 cups Italian Style Meatballs (%
of a 2-pound bag)
1 Tablespoon Olive Oil
% cup diced Onion
% cup diced Celery
10 cups Chicken Broth
1 V2 Tablespoons Basil Pesto
1 teaspoon bottled Minced
Garlic
% teaspoon Salt
1 Va cups uncooked Ditalini Pasta
4 cups Collard Greens (cleaned,
stems removed and torn)
Cook meatballs according
to package directions, then
set aside. In a Dutch oven or a
large heavy pot and over me
dium heat, add olive oil. Once
hot, cook onion and celery for
5 minutes. Add chicken broth,
basil pesto, minced garlic and
salt, then cook for 15 minutes,
stirring occasionally. Increase
the heat to medium-high.
Once boiling, add the ditalini
pasta and cook for 5 minutes.
Reduce heat to medium-low
and add the collards, then cook
for 4 minutes. Stir in the meat-
balls, then remove from heat
and serve.
*Please note that you can
use homemade meatballs in
place of the store bought if you
prefer. Also, if you can't find the
Ditalini pasta noodles, just use
another small noodle in place
of them.

Uvalda Man Killed
When Tree Falls
A Uvalda man was
killed December 29 when a
large tree fell on him at 138
Benton Powell Road near
Benton Lee’s Steakhouse in
rural Toombs County.
Toombs County Sher
iff Alvie Right reported
Monday that Lloyd Mitch
ell Cook, 55, of 229 Lewis
Cook Road, was sitting
near the tree when it fell.
Another man, Joshua Cody
Holt, sustained minor inju
ries in the incident.
The Sheriff’s Office
received the call at 2:40
p.m. Apparently Cook was
killed instantly. “The trunk
of the tree fell on him and
he didn’t have a chance,”
Right said.
Documentation of
Wheeler County Churches
and Cemeteries Begins

Now that he has completed
the work of documenting
all the churches, cemeter
ies and gravesites in Telfair
County, he has begun a
similar project in Wheeler
County.
Hendrix’s study will
locate and catalog grave
locations with aerial pho
tographs and drawings of
each cemetery or gravesite
indicating the exact loca
tion of each grave. Names,
dates and locations of
gravesites will then be
placed into a database ac
cessible to the public.
WCSS 2021 Opening
Postponed Due to COVID
He will also be work
ing to get pictures of the ex
teriors of churches located
in the county, as well as a
picture of the sanctuary of
each church. This would
include all active and inac
tive churches.

for churches and cem
eteries, or of gravesites
not located in a cemetery.
Along with pictures of the
churches, historical infor
mation about each church
or cemetery is also being
compiled.

Superintendent Su
zanne Couey announced
on December 31 that
Wheeler County Schools
will postpone reopening
after the holiday break.
“Due to the increase of CO
VID cases across our state,
health district, and county,
and an increase among our
staff members, Wheeler
County School System ad
ministrators have decided
to postpone our return to
school in order to protect
the health and safety of our
students, staff) and com
munity,” Couey said.
The school system
plans for staff to return
Wednesday, January 6, and
for students to return Mon
day, January 11. Staff mem
bers will wear masks and
maintain social distance
as much as possible upon
their return.
“We hope to follow
this schedule, but the
spread in our community
is related to all our ac
tions. Please continue to
maintain social distance
as much as possible, wear
masks whenever in public,
and wash hands frequent
ly,” Couey requested.

CDC, the initial share of
vaccines, Phase 1A, will
only be administered to
healthcare employees and
long-term care facility resi
dents.
The next phase, IB,
will include essential em
ployees in other sectors
such as education, police,
firefighters, corrections of
ficers, food and agriculture,
and transportation.
Phase 1C will include
those over 65 and adults
with high-risk medical
conditions.
The Moderna vaccine
is administered in two dos
es, 28 days apart. The side
effects appear similar to
those of other vaccines and
are short-lived. No signifi
cant reactions have been
reported among recipients
at Meadows.
“This vaccine allot
ment is not available for
the public at this time,
but once it becomes more
broadly available, we will
encourage everyone in our
community to get vaccinat
ed,” Rent said.
