Thanksgiving Traditions
with Sweet Potato Souffle

RED OUT — Students, teachers, and local government officials were decked head to
toe in red for the annual Red Ribbon Parade at Sally D, Meadows Elementary School
to advocate against drug misuse. The parade featured numerous participants as the
second grade classes led the charge, Some classes even carried signs to promote
positive behavior and decisions.
LIBRARY HERITAGE VAULT RECEIVES FUNDING — The Heritage Vault in the Ladson Room
of the renovated Vidalia library will be named for the Vidalia Woman's Club. The his
toric organization donated $10,000 for the room. The first library in Vidalia was housed
in the VWC building at 404 W. First St. L to R: Presenting the check are Club officers

I t's that time of year
again, to give thanks
for all of the amazing
blessings in our lives. A
special part of Thanksgiving
is family traditions and
in our home, Sweet
Potato Souffle is always
on the menu. With sweet
potatoes that are blended
to perfection with just the
right amount of spices and
sugar and then a crisp
buttery sweet topping
made of cornflakes and
pecans, this dish will give
your loved ones another
reason to feel grateful this
year!
Sweet Potato Souffle
3 medium size Sweet Potatoes (2
Vi pounds)
1 cup Sugar
2 large Eggs (beaten)
Vi cup Evaporated Milk
4 Tablespoons Unsalted Butter
(melted)
1 teaspoon Cinnamon
Vi teaspoon Nutmeg
Vegetable Oil
Non-Stick Cooking Spray
Preheat oven to 450 degrees.
Pierce potatoes with a fork and
rub with vegetable oil (this will
make the peel come off easily).
Wrap each sweet potato in foil
and place on a sheet pan, then
bake on the 4th (lower) rack
for 1 hour and 30 minutes or
until tender when pierced with
a knife. Let cool completely,
then remove the peel from the
potatoes and smash. Preheat
oven to 350 degrees. Spray a 2
quart baking dish with cooking
spray, then set aside. Measure
out 2 1 /3 cups sweet potatoes
and then combine with
remaining ingredients in a large
mixing bowl. Stir until smooth,
then pour sweet potato mixture
into the baking dish. Make the
topping.
Topping:
Vi cup slightly crushed plain
Cornflakes
Vi cup chopped Pecans
Va cup Light Brown Sugar
3 Tablespoons Unsalted Butter
(melted)
Combine the cornflakes,
pecans and brown sugar, then
drizzle in the melted butter and
blend together. Sprinkle on top
of the potato mixture. Cover
and bake on the 3rd (middle)
rack for 20 minutes. Uncover
and bake an additional 10
minutes.

Rescission of Tax
Overpayment Refund
Commissioners voted
to rescind the previously
passed resolution to re
fund Montgomery County
Property Owners Bobby
and Melinda Gibbs for
their overpayment of prop
erty taxes.
Last month, the Com
mission authorized Gibbs
to receive $1,351.69 as a
refund for 7 years of over
paid property taxes, which
resulted from an error in
information about the
property.
The Board of Commis
sioners has decided to hold
off on this action until they
obtain legal counsel on the
issue.
Speed Ordinance
Amendment Adoption
The Commission has
overseen the process of
traffic studies by EMC En
gineers for several months,
as it prepared to set the
speed limits for county-
maintained, off-system
paved roads.
These studies have
now led to the beginning
of the speed limit adoption
process, which began at the
October 11 meeting. For

ing roads affected and the
proposed speed limits, visit

website.
Forestry Building Repair
The forestry building
at Earthsaver Drive will
receive several improve
ments to rid the structure
of mold, thanks to the
unanimous approval of
Commissioners.
The total cost for these
repairs is $7,900 and will
make the building sustain
able for several more years
of use. Commissioners ap
proved the building to be
sprayed for mold and have
waterproof material placed
underneath as a moisture
barrier. The Commission
also approved the removal
of mold-infected sheetrock
and replacement with new
sheetrock, as well as the
caulking, painting, and re
pair of crown molding.
Timber Bid
Tar Land and Timber,
Inc. will purchase 9 acres of
timber from the Montgom
ery County Board of Com
missioners for $12,199;
this sale follows the bid
and contract search which
Commissioners conducted
to harvest trees from 208
Earthsaver Drive.

Robert Toombs Christian Academy held its 9th Annual Trunk or Treat on October 28. This is an exciting
event for the community and for the students. When RTCA first held Trunk or Treat, there were only eight ve
hicles decorated; this year there were 13 vehicles decorated. “This is a great way to get our students involved in
the community. Students are allowed to bring in a certain number of large bags of candy and decorate their cars
for community service hours. RTCA students are required to have a certain number of community service hours
to graduate and this is one of their favorite events to participate in. We are looking forward to making next year’s
event even bigger,” states Terri Kennedy, Trunk or Treat coordinator and High School Math teacher.
