HAM SANDWICHES.
Chop cold ham fine; mix with one part
of the meat, half a cup of melted butter,
one tablespoonful of salad oil, one of mus
tard, the powdered yolks of two hard
boiled eggs, a little pepper. Spread be
tween slices of thin buttered bread.
BOILED BEEF TONGUE.
Wash clean; putin the pot with water
to cover it, a pint of salt, and a small pod
of red pepper; if the water boils away, add
more, so as to keep the tongue nearly
covered until done; boil until it can be
pierced easily with a fork, take out, and if
needed for present use, take off the skin
and set away to cool; if to be kept some
days, do not peel until wanted for table.
LOBSTER SALAD.
Boil a hen lobster. When done, remove
the meat from the shell; mince it; rub the
coral to a smooth paste with a tablespoon
ful of olive oil or melted butter; add the
grated yolks of three hard-boiled eggs, one
teaspoonful of mustard, salt and pepper to
taste, and a wineglass ofgoodcider vinegar.
Mix the sauce well with the meat. Add a
third as much white lettuce or celery; cut
up fine, just before serving. Garnish with
parsley or celery.
POTATO KLOSSE.
Beat a pound of well-boiled, mealy pota
toes to a perfectly smooth pulp, and while
still warm, add salt and pepper, some
slightly melted butter, a tablespoonful of
finely minced parsely and two well-beaten
eggs. Mix these various ingredients
thoroughly, then drop a tablespoonful at a
time into plenty of boiling fat. Fry a
delicate brown, drain very carefully, and
place on a dish covered with hot napkin ;
garnish with tiny sprigs of parsley and
serve very hot.
PICKLED OYSTERS.
Take two quarts of oysters, put in a
saucepan, let simmer, take out the oysters
and add to the liquid a pint of vinegar;
cloves, mace, allspice and pepper; let come
to a boil, and pour over the oysters. Put
in a stone jar. Keep in a cool place.

Salted Almonds. Olives.
Tea or Chocolate.
TURKEY SANDWICHES.
Made same as ham sandwiches.
CHICKEN SALAD.
Two common-sized fowls, one teacup of
fresh sweet olive oil, a half jar of French
mustard, the yolks of ten eggs which have
been boiled hard, half pint of vinegar, one
teaspoonful of cayenne pepper, eight heads
of celery, one teaspoonful of salt, or more
if required. Boil the fowls and put suffi
cient salt in the water to render palatable.
When they are perfectly cold, cut the meat
from the bones, in pieces about a quarter of
an inch in size. Cut the white part of the
celery about the same. Mix the chicken
and celery and set them away. Mash the
eggs to a paste with the oil; then add
vinegar, mustard, cayenne and salt; mix
all thoroughly. When the dressing is
made, pour over the salad a half-hour be
fore serving. Garnish with sprigs of green
parsley and whites of eggs.
GRATED HAM
is one of the nicest relishes for tea or lunch
or for sandwiches. Cut a good-sized piece
from the thickest portion of a boiled ham,
trim off the fat, and grate the lean part.
BOSTON BISCUIT.
One quart of flour, one teaspoonful salt,
one tablespoon each of butter and lard, one
egg. Mix with sweet milk, beat twenty
minutes and bake.
BOHEMIAN CREAM.
Take four ounces of any kind of fruit,
which has been stewed soft with sugar;
pass this through a sieve; add to half a
pint of the fruit, an ounce and a half of
melted ising-glass; mix it well; whip up
a pint of cream, and add to it gradually
the fruit and ising-glass. Put into a
mould, set on ice or in any cool place, and
when ready, dip the mould into warm wa
ter and turn out. Grated pineapple will
make the above cream most elegant. Al
mond cream, very nice, may be made by
substituting, for the fruit, almonds blanched
and pounded with rose-water.

CHRISTMAS CAKES.
QUEEN OF CAKE.
For white part—take half pound sugar,
two tablespoons butter, half pound flour,
whites of six eggs, two teaspoonfuls baking
powder, one grated cocoanut, half pound
citron chopped fine, one pound blanched
almonds. Cut in very thin slices. Flavor
with extract almond, bake in jelly cake pans.
For dark part—half pound sugar, four
ounces butter, half pound flour, two tea
spoonfuls baking powder, yolks of six
eggs; add half pound seeded raisins, half
pound currants, four ounces each of chop
ped citron and figs, half ounce each of
cloves, nutmeg, mace and allspice; a wine
glass of brandy; bake in- jelly pans.
Make an icing of three cups sugar ana one
of water; boil until brittle, take from the
stove and stir in the whites of three eggs.
Add half teacup each of minced almonds
and grated cocoanut, spread alternately on
the black and white cake and put together.
Ice the top with plain icing.
ALMOND CAKE.
One pound flour, one pound sugar, one
pound butter, one pound almonds, half
pound citron, twelve eggs, one glass brandy.
