LEAVES FROM MY COOK BOOK.
BY HANNAH HUGHES.
SILVER CAKE.
One pound of sugar, three quarters of a
pound of flour, six ounces of butter, the
whites of fourteen eggs, and a half pound
of citron. Beat the sugar and butter to a
cream, add the eggs cut to a stiff froth, then
the flour and citron. For flavoring use
either rose water or essence of bitter al
monds.

GOLD CAKE.
Ono pound offlour, dried and sifted, one
pound of sugar, three quarters of a pound
of butter, the yellows of fourteen eggs, and
the juice and grated rind of two lemons.
Beat the sugar and butter to a cream, add
the yellows well beaten, then the fl our, and
a teaspoonful of sal volatile, dissolved in a
little hot water, and lastly, the lemons.
Beat the whole thoroughly. Bake it in
square, flat pans, and then cut it into large
square pieces, and ice them thickly.

Among the Greeks magnificent ban
quets were common. Professional cooks
of great skill were known before the
age of Pericles. It was not beneath the
ambition of poets and philosophers to be
distinguished as the inventors of a new
cake or a popular sauce. The most famous
author of a cook book, whose name has
been handed down to us, is Archdstratus, a
poet of Syracuse. It was a saying among
the Greeks, that the guests at a repasl
should never be more in number than the
Muses, or less than the Graces. Among
the Romans, Lucullus and Apicius have
earned enduring fame by the costliness of
their entertainments.

RENNET CUSTARD.
Clean the stomach of a young calf that
has just been killed, and scour it inside
and out with salt. When perfectly clean,
tack it upon a frame to dry in the sun for
a day, and then cut it into small squares
and pack it down in salt. you wish
to use a piece, soak it for half an hour ir.
cold water, wash it well, and then put it
in a quart of brandy, and set it away lor use.
To make the custard, sweeten and flavor
to taste, one quart of sweet milk, add
a tablespoonful of the rennet brandy and
set it away in a cool place to harden, which
will be in an hour or little over; then serve.
It it stands too long it will turn to curd.
This is one of the most delicate of sum
mer deserts.

A PLAIN BAKED PUDDING.
To every two eggs take a heaping table
spoonful of flour. Beat the yellows well,
add the flour, then make a thin batter with
sweet milk. Beat the whites well, and add
them last. Butter the pudding dish before
putting in the batter. Bake in rather a
slow oven. Serve with a rich sauce.

LEMON PICKLE.
Take two dozen lemons and pare the
yellow rind from them as thin as possible.
Slit them across at the ends, and pack them
in dry salt for three days, and then lay
them to dry in the sun, allowing some of
the salt to adhere to them. Two days hot
sun will be sufficient. Put them in a por
celain-lined kettle, with two quarts of vin
egar, four ounces of white pepper and
white mustard seed mixed, and one grated
nutmeg; let all boil thoroughly together
five minutes. Put them in a jar and tie
them up while hot. Always see that they
are well covered with vinegar. This is a
superb pickle and beautiful in appearance.

tetus and make a pudding; write a Greek
poem as well as embroider a handkerchief.

THE QUEEN OF PUDDINGS.
Rub one tablespoonful of butter into one
and a half cups of sugar, and add the
beaten yellows of five eggs; then add two
cups of bread crumbs that have been soaked
in a quart of sweet milk. Bake in a but
tered pudding dish. As soon as it is done—
that is when the custard is set—draw it to
f.he mouth of the oven and spread jam,
