DIXIE DISHES.
IRISH POTATO YEAST.
Slice four large potatoes; cook in a
quantity of water, with a small bunch of
hops tied up in a thin cloth. When very
soft mash fine, add two tablespoons sugar,
one of salt and a small yeast cake dissolved
in warm water. Place in a close vessel
and keep in a cool place.
BREAD.
Sift one quart of flour twice, half a tea
spoon salt, one tablespoon butter or lard,
one tablespoon good dry yeast (after it has
been pulverized) and a small pinch of
sugar. Mix with enough warm water to
make a soft dough. Set to rise, then work
into it all the flour necessary and knead
thirty minutes. Place in the baking pan;
when it rises put to bake in a moderately
quick oven.
SODA BISCUIT.
One quart of flour well sifted, one table
spoon butter or lard, one light teaspoon
soda, salt to taste, enough clabber to make
a soft dough—wnen buttermilk cannot be
had. The colder the milk, the better the
bread. Never silt the soda with the flour,
but sprinkle in after the flour has been
sifted. Cook five minutes if the heat is
right.
CORN MEAL MUFFINS.
Sift one quart of corn meal twice, pour
over enough hot water to make a smooth,
stiff batter, add two tablespoons lard, three
eggs, a light cup of flour and milk enough
to make a thin batter suitable for muf
fins.
FRITTERS.
One quart of sweet milk, six eggs; salt
to taste, enough flour well sifted to make
a stiff batter; place a spoonful at a time in
very hot lard. Eat with sauce made of
butter and syrup stirred together.
BAKED SHAD.
Make a dressing of bread crumbs, half
of beaten biscuit, half of lightbread, made
fine, season sufficiently with butter, salt
and white pepper. Add three hard-boiled
eggs, mashing the yellows and whites as
smooth as possible. Fill the fish, tie se
curely, place in the baking pan, dredge
with flour, and upon the top lay small bits
of butter; have hot water in bottom of
pan. Baste every few minutes until brown
and the gravy is sufficiently thick.
ROAST TURKEY.
Put the turkey in just enough water to
steam in the pot until tender; place in the
baking pan, dredge with a little flour and
pepper, use half the water in which it has
been steamed for the pan, the other half
for the dressing—which is made by using
very light, sweet, bread crumbs and a very
small portion of corn meal bread crumbs,

with half of the water in which the tur
key was steamed, and‘some sweet milk
—adding three uncooked eggs. Season
highly with salt, pepper and onions chop
ped fine. Cook in hot lard until eggs and
onions are thoroughly done. Baste turkey
very often while cooking. Serve gravy
in bowl and lay the dressing around the
turkey; garnish with curled parsley.
GELATINE.
One box of gelatine, put to soak in one
pint of cold water; add one pint hot water,
one pint scuppernong wine, three lemons, a
stick | of cinnamon, three or four cloves, a
small piece of nutmeg. Place on the fire
and boil a few minutes. Sweeten to taste.
Strain and set away to cool.
MUFFINS.
One pint of flour, three eggs beaten
separately, one teaspoonful of lard, sweet
milk enough to make a thin batter; salt
and bake quickly.
GINGER CAKES.
Place in a pan on the stove one small
cup -of hot water; into the water put one
tablespoonful of lard. In another pan
have one quart molasses. Put one tea
spoon soda in the water and lard; when it
foams pour it into the molasses, constantly
stirring it. Salt the flour and put in two
tablespoons strong ginger; stir the flour
into the molasses until you can work it
with the hands. These cakes keep well
without becoming hard.
BRAIN PATTIES.

spoons butter,three eggs beaten separately,
two beaten biscuits grated, pepper ana
salt to taste. Pour into muffin pans,
sprinkling bread crumbs on top, and bake
a light brown; eat cold or hot.
TEA CAKES.
Five eggs, 'three coffee cups well filled
with sugar, one cup of butter, two tea
spoons yeast powders, half cup of sweet
milk. Flavor with lemon. Beat the eggs
and sugar thoroughly, add the butter well
creamed, the powders and milk last.
Work in as little flour as possible to roll
out with ease into thin cakes, and bake
quickly.
CHICKEN SALAD.
Take one large chicken boiled perfectly
tender; chop up fine the lean meat; be
careful to remove the skin, fat and bones.
Mash fine three hard-boiled eggs; cut up
fine almost half as much celery as you
have chicken, or cabbage if celery cannot
be had. Mix all together with a heaping
tablespoonful of butter, creamed; season
highly with salt, cayenne and white pep
per, vinegar and one cucumber pickle
chopped fine. Garnish top of salad with
celery leaves.
ONE-TWO-THREE-FOUR CAKE.
One cup of butter, two cups sugar, three
cups flour and four eggs. Beat the yolks
and sugar until they are almost white,
cream the butter, then add the whites
stiffly beaten, and lightly sift in the flour
last. Flavor with rose. This cake can
be used as a pudding without any flavor
ing. Serve hot, with wine or cream
sauce.
BRANDIED CHERRIES.
Select large cherries; as you place them
in the jar, cover each layer of cherries
thickly with sugar, then cover all with
fine brandy. It takes some time before
the sugar is well dissolved or they are
ready for eating. Serve them with a rich
syllabub, and sponge or angel cake. This
is an elegant dessert.
JUMBLES.
Two cups sugar, half cup butter, half
cup sour cream, half teaspion soda, two
eggs, and flour enough for the dough to be
easily rolled out. Flavor very highly
with nutmeg.
