GOOD THINGS FOR SUMMER.
PEACH SHERBET.
One can of peaches or the same quantity
of fresh fruit, two cups sugar, one cup
fresh sweet milk with cream,and if peaches
are not finely flavored or very acid, the
juice of one lemon is a great improvement.
ICE CREAM WITH RASPBERRIES.
Take the yolks of six eggs and three cups
of sugar; beat well together, then add the
whites. Heat one quart ot milk and one
quart of cream, add slowly the sugar and
eggs. When cold stir in one quart of per
fectly ripe raspberries,and freeze.
STRAWBERRY ICE CREAM.
Rub one pint of ripe strawberries through
a sieve, add one quart of cream, and
three-fourths pound of white sugar, and
freeze.
PARISIAN CREAM.
Beat thoroughly together 12 eggs with
one and one-fourth pounds of sifted sugar;
add two quarts of pure cream, cook until
the proper thickness. Flavor to taste and
freeze in the usual way.
LEMON ICE CREAM.
Ten quarts fresh milk, ten cups sugar,
yolks of ten eggs, three table-spoonfuls
corn starch, one table-spoonful extract of
lemon. Pour a quart or two of milk upon
the sugar until it is thoroughly dissolved;
rub the corn starch in a little of the milk
and stir in with the beaten yolks of the
eggs, then the extract, and freeze. This
large quantity is given for picnics and
parties.
FROZEN FRUITS.
One pint canned pears, one pint of
preserved plums, one pint canned cherries,
one pint canned pineapple. Drain eff all
the syrup from the fruit; mix and sweeten.
Mash the pears and plums till smooth,
mix with the syrup and freeze hard. Re
move the stones from the cherries and
when the fruit-pulp is frozen, stir in cher
ries and drained pineapple and pack it in
the freezer. Let it stand one hour without
stirring.
DRIED APPLE FLOAT.
Stew dried apples thoroughly, pass
through a sieve until they are as fine as
possible, then sweeten. When cold,
add the whites of eggs beaten to a stiff
froth and cooked by pouring boiling water
over them. Set upon ice and serve with
whipped cream. The flavor of dried ap
ples prepared tbis way is peculiarly grate
ful to many palates and preferred to float
made from fresh fruit.
A NICE APPLE DESSERT.
Stew very soft some tart apples and
sweeten to taste, put in a deep dish one
third full. Fill the remainder of the dish
with a rich boiled custard made with the
yolks of three eggs. Beat the whites well
and lay in spoonfuls roughly over the top,
sift pulverized sugar over all and put in
the oven to brown; when cold set on ice.
Serve with spongecake.

sugar ten cups, one tea-spoonful extract of
vanilla. Pour over the sugar three
quarts of boiling water and boil ten min
utes; add sixquartsof ice water and the juice
of the lemons, then the beaten whites of
the eggs, and vanilla; freeze.
ORANGE ICE.
Strain, the ju ; ce of one dozen sweet
oranges, rub off the yellow rind of four
ot them with a hard lump of sugar. . If
Inaf sugar is not convenient grate the
rind fine. Pour one gallon of boiling
water upon three pounds of sugar; add to
the orange juice. Let cool before freezing.
CLABBER CREAM.
Dissolve two tablespoonfuls of corn
starch with a cup of cold milk. Add a
pint of boiling milk and let cook a little
to thicken. When cold add three pints of
clabber with the cream, but no whey. A
very small pinch of soda improves it.
Beat all well together and flavor with va
nilla. Churn the same as custard—cutting
down occasionally.
CUSTARD CREAM.
Half gallon fresh milk with the cream
on; two cups of sugar, three eggs, two ta
blespoonfuls corn starch. Beat the eggs
well with the sugar and add to the corn
starch, which has been made smooth with
a little irilk, stir this into the half gallon
of milk as soon as it begins to boil. When
cold add a cup of pure cream and two des
sertspoonfuls of vanilla.
APPLE CREAM.
Stew finely flavored apples and mash
very fine by passing through a
sieve. Take as much sweet milk as de
sired with cream and thicken with the ap
ple just enough to give body to the whole,
sweeten and freeze. It requires no flavor
ing except that of the apple.
FRIED ICE CREAM.
Freeze the cream very hard, cut into
small cakes, envelope in pie crust that has
been rolled very thin. Place in boiling
butter just long enough to cook the paste
to a crisp. If thi« is quickly done the
cream will be as stiffly frozen as before and
makes quite a unique dessert.
STRAWBERRY SHERBET.
Mash slightly one quart strawberries
and add two cupfuls ot powdered sugar.
Let it stand two hours. Then add one
pint of cold water and the juice of one
lemon. Freeze without stirring.
RASPBERRY CREAM WITH GELATINE.
Half box of gelatine, halt cupful of cold
water, the same of boiling water, one cup
of sugar, one pint cream whipped, one pint
of raspberry juice. Soak the gelatine in
cold water one hour, then put it with the
sugar and boiling water over the fire and
stir until dissolved; add the juice of the
berries, strain and set in a cool place.
When it has begun to form, stir in the
whipped cream, put in mould and set on
ice to harden,
PINEAPPLE SHERBET.
One can grated pineapple, one quart wa
ter, one pint sugar. Boil the water and
sugar twenty minutes, add the fruit, and
freeze. A lemon added makes it better;
and one tablespoonful of gelatine soaked
until soft gives a creamy sherbet.
APPLE SHERBET.
One pint apple pulp, (steamed and sifted)
one cup sugar boiled ten minutes in one
pint of water and poured hot on one table
spoonful of well soaked gelatine. Mix and
add more sugar if needed, and water to
make like thick cream; add lemon if too
sweet, and freeze.
A SIMPLE ICE CREAM.
Whip and drain ore pint cream; to the
thin part that drains from tbis whip add
one scant cup sugar, one cup cream, one
cup milk, and scald thoroughly. Cool and
add one tablespoonful of flavoring; freeze
•until it resembles mush, then put in the
whip and turn the freezer as fast as possi
ble for five minutes; pack and let stand
i thirty minutes before serving.
