LEMON BEER.
This beer is delicious and thoroughly 1
non-intoxicating. Take a pitcher of hot <
lemonade, made with boiling water, sugar
and lemons to taste; when it cools to a
tepid degree, stir in a yeast cake, and set
the pitcher away covered with a napkin (
till the next day. When it “sings” it is 1
ready for use, though some like it better I

Kitchen Helps.
Tl BOX in the kitchen, or drawer or
shelf in the cupboard, will hold pa
per bags, also strings, and they will be
found useful many times. One use you
may make of the bags is to cover each jar
of canned fruit to keep out the light.
Two or three newspapers spread on the
floor in front of the table, stove and sink
on baking day saves the floor, and they
can be burned when the baking is done.
Iron tacks are good to use in cleaning
bottles and fruit cans. Half fill the jars
with warm soapsuds, then add the tacks,
and shake. The tacks are safer than shot,
as the latter may leave a poison deposit.
When cooking in hot weather, one
should dress as coolly as possible.
For grease spots use equal parts of ether
and chloroform.
Gum arabic and gum tragacanth in
equal parts dissolved in hot water, make
the best and most convenient mucilage to
keep in the house.
When lamps are not in use for a week
or more, the oil should be poured out, or
the stale oil will cause an unpleasant odor
when next it is lighted.
Bits of toilet soap which are very small
may be utilized. Make a bag of Turkish
toweling about nine inches square and put
in it all the small pieces of soap. When
three-fourths full, sew up the end and use
the same as if it were a cake of soap.
For a very bad burn melt beeswax, and
into this pour sweet oil until it makes a
salve which can be readily spread with a
soft brush. Keep every part of burn cov
ered with the salve.
Powdered starch will remove stains
from linen if applied immediately. Tea
stains may be removed from a tablecloth
by immersing it in a strong solution of
sugar for a few minutes, and then rinsing
it in soft water.
There is a personal cleanliness that,
with taste in dress and grace in manner,
rivals and often outshines beauty. Trifles,
like glossy hair, white teeth, well-kept
hands, a smooth skin redolent of health,
sweet breath, fresh linen and spotless gar
ments, go a long way toward making up
the sum of personal attractiveness.
Charming people are never more charming
than when they are radiant with good
grooming. It is some expense and a great
deal of trouble to be habitually and ex
quisitely neat; it pays, though, immensely.
Don’t dip collars or cuffs or shirt fronts
in boiled starch. You will be sure to
come across lumps when ironing. Rub
the starch on the articles on the wrong
side with the fingers, and as soon as it be
gins to appear on the right side it is suffi
ciently starched.
Wood ashes very finely sifted are good
for scouring knives and tinware.

gether and then add half a pint of cream,
the grated peel of one lemon, three ounces
of sugar, a piece of butter the size of an
egg, and the yolks of five or six eggs well
beaten. Mix all together thoroughly, pour
into a dish and bake carefully. Beat the
whites of the eggs to a stiff froth, add three
ounces of powdered sugar and the juice of
the lemon, and stir well. When pudding is
done, put a layer of apricot preserves over
the top, pile the whites over it, and put in
oven to brown lightly.
FUDGE.
The ingredients used in making this
dainty candy may vary according to the
materials obtainable. The following is a
good recipe for it: One cup granulated
sugar, one cup C. sugar, one-half cup
cream, lump of butter size of walnut, two
squares of Baker’s chocolate, and one
spoonful of vanilla. Boil gently till mix
ture is almost ready to thread; remove
from hot lid to warm one, stir briskly till
just before it hardens, then pour over nut
meats spread on well-buttered plates.
The only difficult point is to tell when the
“just before” moment has arrived; judg
ment in the matter must be the outgrowth
of experience.
If you haven’t the cream, use twice the
quantity of butter and a little water. The
sugar used may all be granulated, if neces
sary. Almond, pineapple, or other flavor
ing may be substituted for the vanilla, if
preferred.

A very convenient, one might almost
say necessary, article of kitchen furniture is
a strong stool such as those used in offices.
It should, however, be only two feethigh,
which is the proper height for the average
person to sit on and work easily at a table.
Some women object to them because they
think they cause a maid to fall into lazy
habits; but surely a maid who cannot be
trusted to rest herself when she can con
veniently do so, or at least to do her work
in as easy away as she can, is hardly
worth having. Many kinds of work in
the way of preparing things for cooking
can be done just as 5*611 sitting as stand
ing, provided the seat is high enough to
give the arms full force; and certainly
maid as well as mistress should have the
benefit of all easy ways of working that
can be devised.
A mixture of quinine and whisky not
only is a good hair tonic, but will beauti
fully tone some objectionable shades.
For whitening scorched linen it is often
sufficient to wet it with soapsuds and lay it
in hot sunshine. Another method, where
milk is plentiful, is to put one pound of
white soap into a gallon of milk, and boil
the scorched article in it.
