ILACK PART; One cupful of brown
kl J? sugar, one-half cupful of butter, one
half cupful of sourmilk, one-half teaspoon
ful of soda dissolved in warm water, one
tablespoouful of molasses, two cupfuls of
fleur, one cup r ul of chopped raisins, yolks
ts three eggs, and one teaspoonful each > f
einnamon and nutmeg. Dredge the fruit
before adding. Bake in two layers.
White Part; One cupful of flour, one
half cupful of cornstarch, one-half cupful
of sweet milk, whites of three egg«, ore
half cupful of butter creamed with one
cupful of powdered sugar, and two tea
spoon'uls of baking powder sifted in the
flour. Bake in two layers. Put together
dark and light alternately. Frost with
almond icing.
PLUM JELLY,
Take perfectly sound plums, remove the
stems, wash, and make an incision in each
one. Putin a jar, c>,ver, set the jar in a
kettle of water, let come to boiling point,
and let boil three or feur heurs until all
the juice is extracted from the fruit.
Etrain and boil with an eq ial measure of
granulated sugar until it jellies, stirring
constantly. Put in glasses, and seal as
usual. If the plums are not squeezed in
straining the juice (and the j illy will be
clearer if they are no’) the pulp may be
made into a very nice marmalade by add
ing three-fourths of a pound of the pulp
and cooking until thick.
STUFFED EGGS.
Six hard-boiled eggscut in two; remove
the yolks and mash fine, then add two tea
spoonfuls of butter, one of cream, (two or
three drops of onion juice if liked), and
salt and pepper to taste. Mix all thor
oughly, then fill the eggs with this mix
ture, and put them together. There will
be a little of the filling left, to which add
or e well-beaten egg. Cover the eggs with
this mixture, roll in cracker-crumbs, and
fry a light brown in boiling fat.
Plain baked eggs make quite a pretty
breakfast dish. Take a whiteware dish
thick enough to stand the heat of the oven,
put into it sufficient fresh butter, and
break in as many eggs as you desire, put
ting bits of butter on the top, and set in a
rather slow oven until they are cooked.
Have a dish of nicely prepared buttered
toast, place an egg on each slice, garnish
with curled parsley, and serve hot.
STRAWBERRY SHORT-CAKE.
Three tablespoonfuls of white sugar,
four tablespoonfuls of butter, three tea
spoonfuls of baking powder, and one quart
of fl ur. Make this into a soft dough with
sweet milk; roll out and bake in three
jelly-cake-pans. Mash two quarts of ber
ries and sweeten them well. When the
cakes are done, let the first and third ones
be whole, but split the middle one and put
the berries between the layers, after they
have been buttered. Dust white sugar over
it, and eat it as soon alter making as ycu
can. To make it still richer, before mash
ing the berries reserve some of the finest
ones to place on the top of the cake. Then,
between the layers, alter the berries are
put on, cover them with whipped sweet
cream, sweetened. Cover the top cake
with a thick coating of the cream, and
place the berries on it in clusters or other
wise. This makes a beautiful dish.
KISSES.
Beat the whites of four eggs to a stiff
froth, then stir in one and one half pounds
of powdered loaf sugar; flavor with vanilla
or lemon extract. Continue to beat it un
til it will lie in a heap. Put bts atout the
size and shape of half an egg on letter paper,
about an inch apart, then place the paper
on a piece of hard wood and put into a
quick oven, without closing the door.
Watch them, and when they turn yellow
ish, take them out aid let them cool fur
three or four minutes, then slip a thin
bladed knife urder one and transfer it to
your hand; take another off, join the two
by the sides that lay on the paper, and
place the kiss thus made on a dish.
SWEET PICKLED PEACHES.
Prepare a syrup in the proportion of one
quart of best cider vinegar to three pints
of brown sugar; boil and skim. Peel (rut,
leaving the peaches whole, being sure they
are perfectly sound. To spice, use two
teaspoons of whole cloves and four sticks
of cinnamon to a gallon of fruit—many

prefer to stick a few cloves in each peach
and add brokqn cinnamon to syrup. Put
peaches in the syrup and boil for five
minutes, then put them in a jar, boil syrup
until quite thick, pour over fruit, a- d seal
the jars. This is a German method of
preparing them.
PANNED OYSTERS.
Drain the oysters free from all liquor,
put them in a colander, and allow one or
two quarts of cold water to simply run
through them. Have ready a sheet-iron
pan hissing hot. Throw in the oysters,
shake for a moment, and to each fifty add
two ounces of butter, one-half teaspoonful
cf salt, and a palatable seasoning of pep
per. With a wooden tpoon stir until they
boil, and serve immediately.
SOUP A LA BRUNNt ISE.
Cut into squares or small pieces one car.

celery; pvt these into a soup kettle with
two ounces of butter, ard let them cook
slowly for thirty minutes; by this time the
vegetables th mid be of a light golden color.
Now add to this ihree pints of clear con
somme; cover the kettle and cook gently
for one hour. Strain, remove every par
tie’e of grease, and serve with strips of
toasted bread.
GRCUND BEEFSTEAK.
Fur this dish, coarse lean beef may be
used, adding a small quantity of suet. Run
it through a sausage mill, grinding very
fine, then add pepper and salt, make into
cakes ard fry in hot fat. This is not only
cheap, but nearly as good as the choicest
cut. The cakes are nicer if rolled in crack
er crumbs and beaten egg before frying.
Serve with mashed potatoes.
COCOA.
Four tablespoonfu’s of cccoa, one-half
cupful of cold water, one quart of boiling
water, and f< ur tablespoonfuls of sugar.
Moisten the cocoa with the cold water un
til it is well mixed; pour over it the boil
ing water, stirring well, until it reaches
the boiling point, then take immediately
from the fire, and add four tablespooi fuls
of sugar. Four it back and forth from one
pitcher to another until it looks light and
frothy, then serve at once with a little hot
milk and whipped cream.
