MjHtM MttA aMA aMA Jfof Woman's Work. * s CULINARY HELPS. : CHOCOLATE COOKIES. and one half cups of sugar, one half cup of butter, one teaspoonful of vanilla, one egg, one half cup of milk, one teaspoonful of baking powder, two ta blespoonfuls of chocolate, and flour enough to make a soft dough—Just stiff enough to roll out well. raisin cake. One cup of sugar, one-half cup of butter, one teaspoonful each of cinnamon and nut meg, one-half teaspoonful each of cloves and allspice, one-half cup each of molasses and sour milk, one teaspoonful of soda, two eggs, three cups of flour, one cup of seeded raisins chopped or cut in halves, and one half cup of preserved orange peel and cit ron together. HUCKLEBERRY PUDDING. One pint of milk, two eggs, one-half cup of baker’s yeast, one saltspoonful of salt, one teaspoonful of seda, one quart of berries, fleur. Make a batter of the eggs, milk, yeast, salt, and enough flour to make pret ty stiff. Add the soda dissolved in warm water, and set to rise for four hours in a warm place. When you are ready to boil the pudding, stir in the fruit, well dredged with flour, quickly and lightly, and boil in a floured cloth for two hours. Serve hot with hard sauce. POTATOES AU GRATIN. One pint of boiled, sliced potatoes, two tablespoonfuls of butter, one large table spoonful of flour, two cupfuls of milk, one teaspoonful of salt, one-fourth teaspoonful of pepper, yolks of two eggs, one-half cup of fine bread crumbs, and one-third cup ful of grated cheese. Melt the butter, add the flour, and cook one minute without the seasoning; add the milk, stir until smooth and thick, then season with the salt and pepper, and add the yolks of the eggs well beaten. Put the slices of pota toes into a deep baking dish, and pour this sauce over them; sprinkle over this the grated cheese and bread crumbs, dot here and there Email bits of butter, and place ia a hot oven for ten minutes to brown deli cately. Serve hot. PRUNE MARMALADE. Two and one-half pounds of prunes, cooked and stoned, six fine, large cooking apples, pared and sliced, Juice of four lem ons, and two cups of sugar. Simmer to gether until the apples are thoroughly cooked, taking care that there is sufficient water to prevent scorching, thenfress through a coarse strainer and set away in Jars to keep for use. CHICKEN FRITTERS. Cut cold chicken into small pieces, and sprinkle with salt and pepper. When ready to cook have fritter batter ready, then stir into it the minced chicken. Drop by spoonfuls into the hot fat and fry a light brown. Serve immediately. PECAN AND MAPLE CAKE. One cup of butter, two cups of sugar, three cups of sifted flour, four eggs, two teaspoonfuls of baking powder, one cup of water, and one teaspoonful of vanilla ex tract. Cream the butter, add the sugar and beat together thoroughly, then add the yolks of the eggs and beat till light; add the water a little at a time. One cup of Woman’s Work. the flour ard the baking powder should be sifted tcgather and added Just before the stiffly beaten whites are folded in; and the vanilla is stirred in Just before putting into the pan*. Bake in three layers. For the filling, break into small pieces sufficient maple sugar to make two cupfuls; add half a cupful of water and melt slowly, then boil, withcut stirring, until a little dropped in cold water will form a soft ball. Pour this on the beaten whites of two eggs; add a cupful of beaten cream, a pinch of salt and a cupful of chopped pecan meats, and beat till thick enough to spread. FRITTER BATTER. One cupful of milk, two cupfuls of flour, one-half tablespoonful of melted butter, one teaspoonful of salt, and two eggs. ( Beat the yolks of the eggs well, then add to them the milk, butter and salt; pour this on the flour by degrees, beating it in' thoroughly. Set it aside, and when ready to use, add the whites of the eggs beaten stiff. This batter is used for chicken, oys ters, clams, fish, etc.; also for pineapples, peaches, pears, and various other fruits. The batter may be sweetened for fruit fritters by adding one-third of a cupful of sugar. STRAWBERRY BUNS. Bring to scalding point five cupfuls of milk, let ccol; season with salt, add one yeast cake and enough flour to make a drop batter, and beat thoroughly. When light, stir into it one pound each of butter and sugar (previously creamed), add enough flour to make a soft dough, and let rise again. When light, make up into buns, working into the slit a teaspoonful of strawberry Jam, then pinch the slit togeth er, and place the buns on well-greased tins. Let rise the third time, then bake in a hot oven. Wash over with beaten egg while hot. OTHELLO CAKE Scrape two ounces of chocolate and melt with a tablespoonful of butter and three of sugar. Beat half a cupful of butter to a cream and gradually add a cupful of su gar; add the melted chocolate and half a teaspoonful of vanilla, and beat well. Beat the yolks of four eggs and add with one and three-fourth cupfuls of flour, half a cupful of milk, and a teaspoonful of bak ing powder. Add the beaten whites of two eggs last. Filling: Scrape four ounces of chocolate and melt with half a cupful of sugar aad four tablespoonfuls of water. Beat the whites of four eggs; add two cup fuls of sugar, a teaspoonful of vanilla and the melted chocolate. Beat till thick enough to spread. Cover each layer, after it is spread with the chocolate filling, with chopped walnut meals. CHERRY CREAM Beat the whites of four eggs with two tablespoonfuls of sugar; set the dish over hot water, and by degrees pour ia a cupful of cream, stirring until well thickened; re* move from the fire and add two table spoonfuls of honey. When thoroughly cold turn into the freezer together with half a pint of whipped cream, and freeze to the consistency of mush; lift the cover and stir in a heaping cupful of sweetened cherry-pu’p; continue freezing until smooth and firm; repack in a mold and harden.
