This process, known as hydrogenation, occurs most often in foods such as margarine, crackers, cookies, and most foods made or fried in oil. While trans fats benefit companies looking to increase the shelf life of their foods, that benefit comes at the cost of the consumer’s health. Trans fats are known to raise the levels of a person's low-density lipoprotein (LDL), otherwise known as their “bad” cholesterol. The danger in raising your bad cholesterol lies in the heightened risk of coronary' heart disease thatoccurs from such an increase. Such danger is one reason the Food and Drug Administration fought so hard to have trans fat levels listed on food labels.
