spice
3 tablespoons ground cin
namon
2 tablespoons ground

Pare, core and slice apples.
Boil cider down to half the
original amount. Add apples
and cook unti broken up.

sterilized jars and seal.
Applesauce
Wash and drain fresh
apples. Remove stem and
blossom ends. Slice and
cook apples until soft, with
just enough water added to
start cooking. Press apples
through sieve or food mill
to remove skin and seed.
Sweeten sauce to taste.
Add a few grains of salt.
Reheat to boiling. Pour boil
ing hot sauce into hot fruit

“I don’t remember play
ing them before when they
were undefeated,” said Nix
about the comparisons of
this year’s Baldwin squad
to previous ones. “They are
well-schooled. We are going
to have to be focused and
have a sense of purpose and
urgency.
“They are physical. They
run the football tough and
have good athletes. The quar
terback’s done an exceptional
job from what I’ve seen. They
may not have a 6-4 receiver
like Bonner, but they have
a lot of 5-10, 5-11 receivers
who can catch the football.
They have good players at a
lot of positions.”
Northside, in its quest to
defend the AAAA state title,
has marched through the
competition with the ease
Eagle fans have come to enjoy.
But the Eagles have had
their share of issues like the
knee injury to senior receiver
Nick Bass suffered in the
win against Jones County on
Sept. 20. Bass has not played
in the last two games, and
though he was practicing
Monday was doubtful about
his availability for Friday.
“That’s what you have to
deal with,” said Nix. “They’re
not going to keep up with
how many injuries you have.
They keep up with the score,
who won and lost the game.
Whoever plays has to be
ready to play, and I think our
guys have done a good job
stepping up.”
Senior Kevyn Cooper did
his part to pick up the slack
last Friday in the win against
Stockbridge. Cooper had two

Even with limited playing
time, Green has 17 rushing
touchdowns and one receiv
ing. Nix, by the way, does
not see anybody getting a
chance to sit out early against
Baldwin. And one cannot
forget what the Northside
defense is doing with only 23
points allowed in six previous
games.
“Our coaches do a real
ly good job getting them
coached up,” said Nix. “They
understand what their role is
as far as the big picture, win
ning. They also understand
their role as far as what to do
in relationship to their posi
tion. You have to be pleased
with them, and I think they
will continue to do a good job
and get better.”
