Yvonne's White Chocolate Cheeese Cake (adapted trom Betty Crocker)
11/2 cups graham cracker crumbs, about 20 squares
1/4 cup chopped pecans
2 tablespoons sugar
1/3 cup butter or margarine, melted
1 cup white chocolate baking chips
3/4 cup sugar
Position the oven rack to lowest position. Preheat the oven to 400 degrees. Lightly grease the bottom and sides of a 8
x 3 inch springform pan. Remove the bottom. Mix the cracker crumbs, pecans, 2 tablespoons sugar and the melted but
ter. Press 3/4 cup of the crumb mixture evenly onto the bottom of the pan and place the bottom on a cookie sheet. Bake
6-8 minutes or until golden brown. Reassemble the bottom and top of the pan and press the remaining crumb mixture
around the side. Cut an 11-inch circle of heavy-duty aluminum foil and place the pan on the foil circle. Wrap the foil up
side of the pan to prevent dripping.
Put the white chocolate baking chips in a heat-proof, 2-cup measure. Put the cup in a 1 1/2 quarter sauce pan and add
2 inches of water. Heat over low heat, stirring frequently until the chocolate is melted. Remove from heat.
Increase the oven temperature to 475 degrees. Beat the melted chips, 3/4 cup sugar and flour together until well
blended. Add the cream cheese and egg yolks and beat until smooth. Add the eggs one at a time, beating after each
addition. Add the sour cream and beat again. Pour the mixture carefully into the crust and cover with aluminum foil
Bake 20 minutes and remove foil. Reduce the oven temperature to 300 degrees. Bake 1 hour. (If the cheesecake
begins to brown oo quickly cover again with foil.) Turn off the oven and leave the cheesecake an additional 15 minutes.
Place the cheesecake on a wire rack and cool for 15 minutes. Run a metal spatula around the side to loosen. Cover
tightly and refrigerate at least 8 hours. Run a spatula around the side again and remove the side. Place the cheesecake
on a serving platter and garnish with fruit.
Leftovers should be refrigerated immediately.

Holiday Rice Pllat
Perfect with roast beef, this well-seasoned
rice pilaf starts with rice cooked in beef
broth, and is then dressed-up with onions,
garlic, yellow or red pepper, mushrooms and
toasted pecans.
1 tablespoon butter
1 medium onion, finely chopped
1 cup thinly sliced Shiitake or button
mushrooms
1 clove garlic, minced
1 medium red or yellow bell pepper,
chopped
3 cups cooked rice (cooked in beef broth)
3/4 cup coarsely chopped toasted pecans
1 tablespoon chopped fresh thyme or 1
teaspoon dried thyme •
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Heat butter in large skillet over medium
high heat until hot. Add onion, mushrooms
and garlic. Cook and stir 3 to 5 minutes
or until onion is tender. Add red bell pep
per cook and stir 1 to 2 minutes. Add rice,
pecans, thyme, salt and pepper. Cook and
stir 2 to 3 minutes or until thoroughly
heated.

Apple Custard Tart
From Eagle Brand, this recipe combines
a custard base with fresh cinnamon glazed
apples. You can substitute your favorite
prepared pastry-type pie crust if you don’t
have a tart pan with a removable bottom.
However, a tart pan is a very handy kitchen
standby and can be used for quiche as well.
1 (15 ounce) package refrigerated unbaked
COUNTRY COOKING.
Pork Roast and Peaches
What makes this glazed pork roast really special is the baked peach halves flavored with
brown sugar and cinnamon. Serve with potatoes au gratin (recipe below),southern greens
and cornmeal muffins.
2-3 pound boneless pork roast
GLAZE
1/2 cup honey mustard
3 tablespoons prepared horseradish
2 tablespoons brown sugar
GARNISH
2 16-oz. cans peach halves, drained
2 tablespoons brown sugar
1 teaspoon cinnamon
2 tablespoons butter
Heat oven to 350 degrees F. Place roast in shallow roasting pan and roast for 45 minutes.
Meanwhile, in small bowl mix together Glaze ingredients.
Place peach halves in shallow baking dish, cut side up. Sprinkle peaches with combined
2 tablespoons brown sugar and cinnamon; dot with butter. Spread Glaze over surface of
roast and continue to roast for 20-30 more minutes, until internal temperature, measured
with a meat thermometer, reads 155 degrees F. Place peaches in oven for 15 minutes to heat
through. Remove roast from oven and let rest 10 minutes. Slice roast and serve surrounded
by peaches.

Potatoes au Gratin •
This is an old favorite that deserves a place on any holiday table. The recipe is from the
Idaho Potato Commission and we recommend using the big bakers because their texture is
just right for this dish.
2 pounds of Idaho Potatoes, peeled and thinly sliced (about 5 cups)
2 tablespoons melted butter
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup grated sharp cheddar cheese
1/4 cup fresh bread crumbs
Pre-heat oven to 425°F. Lightly grease a shallow 1 1/2 quart casserole with butter.
Arrange sliced potatoes in layers. Sprinkle with melted butter, salt and pepper. Top with
grated cheddar cheese and bread crumbs. Bake 30 minutes, covered.
Uncover and bake an additional 15 minutes or until potatoes are tender.

1 1/2 cups sour cream
1 (14 ounce) can Eagle Brand Sweetened
Condensed Milk
1/4 cup frozen apple juice concentrate,
thawed
1 egg
11/2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon
2 medium all-purpose apples, cored, pared
and thinly sliced
1 tablespoon butter or margarine
Apple Cinnamon Glaze:
1/3 cup frozen apple juice concentrate,
thawed
1 teaspoon ground cinnamon
Let refrigerated pie crust stand at room
temperature according to package direc
tions. Preheat oven to 375 degrees F. On a
floured surface, roll pie crust from the cen
ter to edge, forming a circle about 13 inches
in diameter. Ease pastry into 11-inch tart
pan with removable bottom. Trim pastry
even with the rim of the pan. Place pan on
baking sheet. Bake crust 15 minutes or until
lightly golden.
In small bowl, with mixer, beat sour cream,
Eagle Brand, apple juice concentrate, egg,
vanilla and cinnamon until smooth. Pour
into prepared pie crust. Bake 25 minutes or
until center appears set when shaken. Cool
1 hour on wire rack.
In large skillet, cook apples in butter until
tender-crisp. Arrange apples on top of pie;
drizzle with Apple Cinnamon Glaze. Chill in
refrigerator at least 4 hours. Store leftovers
loosely covered in refrigerator.
Apple Cinnamon Glaze: In small sauce
pan, combine 1/3 cup frozen apple juice
concentrate, thawed; 1 teaspoon ground
cinnamon; mix well. Cook and stir over low
heat until thickened and bubbly.

2 eight ounce packages cream cheese, softened
2 egg yolks
2 eggs
1/2 cup sour cream
1-2 cups cut fruit or berries for garnish
