Blend at high speed in blender or mixer
for 1 to 2 minutes, until uniformly smooth.
Pour into prepared crusts. Cover. Freeze

Rocky Road Cereal Bars are an infor
mal treat, but just as tasty as something
more formal. They are super-easy to make
(the only cooking involved is the melting
of chocolate chips on the stove or in the
microwave). Plus they live-up to the lofty
standard invoked by the term “rocky road”:
a medley of sweet flavors and textures soft
and squishy marshmallows, snappy peanuts,
rich semi-sweet chocolate, creamy peanut
butter, and crunchy crispy-rice cereal.
Makes Two Dozen Bars
6-1/2 cups chocolate crispy cereal
4 cups miniature marshmallows
1 cup peanuts
1 cup Karo Light Corn Syrup
1 package (12 ounces) semi-sweet chocolate

cream will work nicely. A heavy cream (also
referred to as whipping cream) will give a
very rich, creamy result. Use light cream
(half and half) for a lighter dessert.

make of the scores of dessert recipes offered
at KaroSyrup.com.
1 cup creamy peanut butter
COMBINE cereal, marshmallows and peanuts
in a large mixing bowl. Set aside.
HEAT corn syrup and chocolate chips in
a saucepan over medium heat until smooth,
about 4 to 5 minutes OR in a 1-quart micro
waveable bowl; microwave on HIGH (100%)
for 1-1/2 minutes until smooth. Remove
from heat and stir in peanut butter. Combine
with cereal mixture and mix well.
POUR into greased 13x9-inch pan; pat
into place.
CHILL (REFRIGERATE) 1 to 2 hours
until firm, then cut into 24 squares.
Recipe Tip: Peanuts come in a variety of
forms: salted, lightly salted, unsalted, dry
roasted. Use your favorite!

until the dough is elastic
and conies away from the
sides of the bowl. Turn
out onto a lightly floured
board and knead about 5
minutes.
Without a dough hook:
Continue adding the flour
cup by cup and stirring
in. At some point you will
need to turn it out onto
a board and incorporate
the flour with your hands
to make a firm dough.
(Again you may not need
the entire 7 cups.) Once
a firm dough is formed,
knead 10 minutes or so
until the dough is smooth
and elastic. (Add more
flour, if necessary.)
Place the dough in a
large, lightly greased bowl,
spray the top of the dough
with cooking spray, and
cover with a towel. Set
the bowl in a warm, dark,
draft-free area (or as close
as possible) until it has
doubled in bulk. Punch
down, replace the towel
and allow it to rise again.
Cut the dough into thirds
and shape each third into
a ball. Roll each ball
into a rectangle. Roll up
lengthwise forming medi
um-long loaves. Moisten
the edges to seal, if neces
sary. Place the loaves on a
cookie sheet sprayed with
cooking spray. Cover them
with a towel and let them
rise another 30 minutes.
Make diagonal slashes in
the bread with a clean,
single edged razor.
Bake at 375 degrees for
35-45 minutes. After 10
minutes, baste the crust
with butter. Continue
baking and basting with
butter until the bread is
nicely browned and done
through. If the bread

Chicken Stock •
Can be frozen up to
three months.
I like to serve first course
soups for company meals.
Homemade stock is so good
for. this. Sometimes I just
cook and rinse small soup
noodles and add them to
the stock and heat. I serve
the broth with Parmesan
cheese to sprinkle into the
soup. (The noodles should
be cooked and rinsed sepa
rately or they will cloud
the stock.)
Probably the best stock
is made with a stewing
hen. However, what do
you do with a hen that has
had all the flavor cooked
out of it? It seems waste
ful. I prefer using chicken
parts and leftover roast
chicken bones with some
meat still clinging to them.
The skin from a roasted
chicken will impart a nice
flavor.
8 pounds chicken backs,
necks, wings, and/or leftover
chicken bones and skin.
2 onions, quartered
2 ribs celery, cut into
chunks
2 carrots, cut into chunks
4 quarts water
2 teaspoons of salt
1 teaspoon white pepper
3 bay leaves
1 teaspoon dried parsley
Combine all the ingredi
ents in a large stock pot.
Bring to a LOW boil and
reduce to a simmer. Let
simmer about 4 hours or
until the bones and meat
are falling apart. Add

bles covered. Do not allow
to boil rapidly or the stock
will become cloudy.
When the stock is done,
cool about an hour. Strain
out the solids and discard
them. Put the stock into
quart freezer containers.
Cool and freeze. I don’t
skim the fat if I’m going
to freeze this because it
makes a protective layer
over the stock. You can
easily lift the fat off the
cold, defrosted broth
before using.

3 cups herbcd stuffing mix
2 onions, finely chopped
4 eggs, slightly beaten
4 pounds ground beef
4 tablespoons
Worcestershire sauce
2 teaspoons dried parsley
3 teaspoons dry mustard
3 teaspoons salt
»1 teaspoon freshly ground
pepper
1 cup milk
Preheat the oven to 350
degrees. Spray two 9 x
5 inch pans with cooking
spray.
Combine all the ingre
dients into a large bowl.
Mix the ingredients well
with freshly washed
hands. Divide the meat
in half and pat into the
2 prepared loaf pans.
Bake 1 hour or until done
through.
Cool. Have one for din
ner. Freeze the other.
