and other cold snacks may
offer some comfort. If the
problem lasts for more than
twenty four hours,' check
with your doctor.
Childhood illnesses can
be scary and frustrating.
Remember to keep your
child hydrated and give
small amounts of mild foods
he enjoys eating so he can
get well quickly. It is very
important to be in touch
with your child’s doctor if
you have questions or if
your child does not seem to
be getting well.

Dried fruit _
Tropical Fruit Salsa
1/2 teaspoon ground cori
ander
1/4 teaspoon ground
cumin
1/8 teaspoon cayenne
pepper
1 cup dried, mixed tropical
fruit
1/3 cup orange juice
2 tablespoons cider vin
egar
2 tablespoons orange
marmalade
1 1/2 teaspoons finely
chopped jalapeno
1 tablespoon finely
chopped onion
Combine the spices, ffuit
and orange juice in a small
sauce pan. Bring this to a
boil, turn off the heat, stir
in the marmalade and let
the sauce sit about 20 min
utes. Stir in the jalapeno
and onion. Reheat briefly.
This makes a good rel
ish for broiled chicken or
fish. I served it with broiled
Tilapia.

3/4 cups mixed dried fruit
about 2 cups boiling water
2 tablespoons butter or
margarine
1/2 cup chopped green

Heat griddle or skillet
to medium heat (350 9 F.).
Grease lightly with oil.
Combine eggs, milk and muf
fin mix in medium bowl; stir
just until large lumps disap
pear. Batter will be thin. For
each pancake, pour about
1/4 cup batter onto hot grid
dle. Cook 1 to 2 minutes or
until pancakes begin to look
dry around the edges. Turn,
cook 1 to 2 minutes, or until
golden brown.
Roll one pancake around
each sausage link. Top with
syrup or put syrup in a small
bowl for dipping.

Tear spinach leaves into
bite-sized pieces.
In large bowl, combine
spinach, turkey, orange
and onion slices, peanuts
and raisins. Cover and chill
until serving time.
In 1 cup measure, com
bine olive oil, vinegar, chut
ney, curry powder, mustard
and salt. Cover and hold at
room temperature.
Just before serving, pour
dressing over salad, tossing
to coat.

Dijon-Blackened
Chicken Salad
4 skinless, boneless
chicken breast halves (4
oz. each)
4 tbsp. Dijon mustard
3/4 cup oat bran
1/4 cup Parmesan
cheese, grated
1 tsp. dried thyme
Non-stick cooking spray
Salad:
4 cups Medium Shells,
onions, using some of the
green
1/2 cup chopped celery
1 1/2 teaspoons curry
powder
1/2 teaspoon ground gin
ger
1/4 teaspoon allspice
2 chicken bouillon cubes
1 cup basmati or jasmine
rice
Cover the dried fruit with
the boiling water and let sit
for about 30 minutes.
Meanwhile melt the but
ter in a medium sauce pan
until foam subsides. Add
the onion and celery. Saute
until the onions are trans
lucent. Add the spices and
saute a minute to develop
the flavor. Remove from the
heat.
Drain the fruit, reserv
ing the liquid. Add enough
water to the soaking liquid
to make 2 cups. Put the
liquid in a medium sauce
pan and add the bouillon
cubes. Return to the heat
and bring to a boil. Reduce
the heat to low and add the
rice, stirring once. Cover
and cook 15-20 minutes or
until the liquid is absorbed.
Stir in the fruit.

I found this great recipe

1/2 teaspoon baking soda
Heat griddle or large skil
let to medium-high heat
(375 9 F.). Grease lightly with
oil. Griddle is ready when
small drops of water sizzle
and disappear almost imme
diately. Pancakes will stick if
griddle is too cool.
In a large bowl, beat eggs
with fork or whisk. Add but
termilk and oil; mix well.
Add all remaining ingredi
ents; stir just until large
lumps disappear. For thick- ,
er pancakes, add additional
flour; for thinner pancakes,
add additional buttermilk.
For each pancake, pour
about 1/4 cup batter onto
hot griddle. Cook 1 to 2 min
utes or until bubbles begin
to break on surface. Turn;
cook 1 to 2 minutes or until
golden brown.
Variations:Apple
Pancakes: Add 1/2 cup shred
ded peeled apple and 1/2 tea
spoon cinnamon to batter.
Blueberry Pancakes: Add 1
cup fresh or frozen blueber
ries to batter or sprinkle
over pancakes on griddle
before turning. Cheese: Add
1/2 cup shredded cheese to
batter. Nut: Add 1/2 cup
chopped nuts to batter or
sprinkle over pancakes on
griddle before turning.

with Mixed Berry Sauce
Sauce
3/4 cup fresh or frozen
raspberries
5 tablespoons water,

1 green bell pepper, cut

1 cup canned corn,
drained
1/2 cup sliced red onions
Dressing:
1/4 cup frozen apple juice
concentrate, thawed

2 tbsp. Dijon mustard
4 tsp. fresh apple, grated
1/4 cup cilantro,
chopped
1 tsp. sugar
1/4 tsp. cayenne pepper
Cook pasta according to
package directions; drain
and rinse under cold water;
drain again and set aside.
When pasta is cool, toss
with other salad ingredi
ents in a large bowl and
set aside.
Set oven to broil. Pound
chicken between wax paper
sheets until 1/4-inch thick.

brown sugar, cornstarch,
lemon juice and strawber
ries in saucepan; cook over
medium heat until thick
ened 3 to 5 minutes. Stir in
blueberries, if desired.
Heat griddle or skillet
to medium heat (350 9 F.).
Grease lightly with oil.

Blend dressing ingredi
ents together at high speed
in food processor or blend
er. Toss pasta salad with
dressing, top with chicken
strips and serve.

Salmon Pasta
Salad
This salmon and pasta
recipe includes chopped
tomato, celery, cucumber,
green onion, and Parmesan
cheese.
6 ounces thin spaghetti
1 small can (7 3/4 ounces)
salmon
1/3 cup vegetable oil

la. Whisk the egg mixture
into the larger bowl of sugar
mixture and then pour over
bread-chocolate mixture and
stir to combine.
Pour the batter into a
greased 9- by 13- by 2-
inch baking pan and sprinkle
with the remaining 1/4 cup
of the sugar mixture. Scatter
the butter cubes over top
and bake until golden brown
and just set in the middle, 50
to 60 minutes. Remove from
oven and spread the cherry
jelly evenly over top. Serve
warm or at room tempera
ture.
Cook’s note: Bread pud
ding can be baked 1 day
ahead, chilled, and reheated
in a 350-degree oven until
heated through, about 20
minutes.

The old saying is true - milk does a body good.
But so do weight-bearing exercise and other dairy and
non-dairy foods that contain calcium, magnesium, potas
sium, phosphorus, protein and vitamin D.
Physicians recommend parents teach their children to
eat a healthy, balanced diet that contains low-fat milk, low
fat yogurt, fruits and vegetables and to maintain an active
lifestyle to improve their overall bone health.
“When you think about it, bones and muscles are very
important for all the activities that kids want to do,” said Dr.
James Guthiel, a pediatric orthopedist in Lubbock.
However, children and teenagers aren’t getting enough
calcium and vitamin D in their diets, and they’re not run
ning, jumping, walking or playing basketball, tennis or soc
cer as often as their parents did when they were young.
Instead, children and teenagers often are sedentary after
school, preferring to play video games or watch television
rather than play outside.
Results from the 2003-04 National Health and Nutrition
Examination Survey indicated that an estimated 17 per-
