Pork Check Off
Ready for something new for Sunday dinner? Try pork
roast with Cajun seasonings.
S’More Cookie Bars
Ingredients:
1/2 cup (1 stick) butter or margarine, softened
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
1-1/3 cups all-purpose flour
3/4 cup graham cracker crumbs
1 teaspoon baking powder
1/4 teaspoon salt
4 (1.55 oz. each) Hershey’s Milk Chocolate Bars
1 cup marshmallow creme
Instructions:
1. Heat oven to 350°F. Grease 8-inch square baking pan.
2. Beat butter and sugar in large bowl until light and
fluffy. Add egg and vanilla; beat well. Stir together flour,
graham cracker crumbs, baking powder and salt; add to
butter mixture, beating until blended. Press half of dough
into prepared pan.

perfect it is a shame to slice
them. I like to dip them in
white chocolate for a pretty
dessert by themselves or to
garnish another dessert.
White Chocolate-Dipped
Strawberries
2 pints strawberries
6 ounces white baking
chocolate
Leave the strawberries
whole with the stems intact.
Wash and thoroughly dry
them. Line a cookie sheet
or platter with waxed paper.
Meanwhile, break the choco
late squares in half and put
them in a microwave-proof
bowl. Microwave on medi
um for two minutes and stir.
Microwave another minute
and stir until smooth.
You can grasp each straw
berry by the stem to twirl
in the chocolate, but I think
it is easier to put it on the
end of a skewer. Twirl each
strawberry in the chocolate
leaving a decorative twirl on
the top side and set on the
waxed paper to cool. They
will cool faster in the refrig
erator. Once they are hard
ened you can put them a
bowl and cover loosely with
plastic wrap. Refrigerate
until serving.

Put the cheese in a shal
low dish and cover with
vinaigrette. Let marinate
about 8 hours or overnight.
Line an oblong plate with
the lettuce. Slice the toma

ter of the platter. Arrange
the asparagus on both sides.
Drizzle the salad with vinai
grette and sprinkle with the
sliced green onions.
Vinaigrette Dressing
4 tablespoons red wine
vinegar
4 tablespoons lemon juice
4 teaspoons minced garlic
2 tablespoons minced
onion
4 teaspoons dried basil
leaves
1 teaspoon dry mustard
1 teaspoon salt
2 teaspoons pepper
1 1/2 cups salad oil
Combine all the ingredi
ents in a blender and pulse
several times. Slowly driz
zle in the salad oil.
Save any remaining vin
aigrette in a tightly covered
container for later use.
NOTE: There are lots
of other things you could
use on this salad including
hearts of palm or roasted

Cajun Pork Roast
From the Pork Check Off, this recipe gives a new flavor
twist to pork roast. Serve with roasted new potatoes and
a fresh salad, or go all out and with beans and rice. In a
hurry? Use your favorite Cajun seasoning or rub. A meat •
thermometer is a help in making sure that pork is cooked
long enough but not too long!
2-pound pork loin roast
3 tablespoons paprika
1/2 teaspoon cayenne pepper
1 tablespoon garlic powder
2 teaspoons thyme
2 teaspoons oregano
1/2 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon cumin
1/4 teaspoon nutmeg
Combine all seasonings and rub well over all surfaces of
roast. Place roast in shallow pan and roast in 350 degree F.
oven for about 45 minutes, until internal temperature is 150
degrees F. Remove from oven, let rest 5-10 minutes before
slicing.

Finely chop the garlic
cloves in a food processor.
Add the beans, lemon juice
and spices. Puree until
smooth. With the food pro
cessor running, add the olive
oil in slow stream to make a
creamy dip. Season to taste
with salt and pepper.
Serve with fresh veggies
for dipping or with crackers
or toasted pita triangles.
