Freschetta
Pizza your way
From staff reports
If your family loves pizza, but the cost is too high for take
out, here’s an option to consider. Build your own, making
your own crusts at home, or use the new fresh lines of pizza
crusts from the grocery store.
Freschetta, which is offering a new “build and bake” line
of pizza products, recently brought in a team of chefs to
come up with some new takes on an old favorite.
Here, for your inspiration are some of their recipes.
The Cheeseburger Pizza
Created by Chef Kent Rathbun, makes 2, 12” pizzas
4 tablespoons olive or vegetable oil
4 small cloves (2 tablespoons) garlic, minced
V 2 medium (1 cup) onion, minced
To taste kosher salt and pepper
1 lb. ground beef, ground chuck, or ground sirloin
1 package (2, 12”) Freschetta Build & Bake Traditional
Crusts
1 cup (9 oz.) Freschetta Build & Bake Traditional Pizza
Sauce
1 package (12 oz.) Freschetta Build & Bake Premium 4-
Cheese Blend
16 slices yellow American cheese, fold on diagonal, creating
a triangle, or sliced, yellow Cheddar, cut in 16 triangles
10-12 small cherry tomatoes, quartered
Preheat oven to 400 degrees. Heat a large frying pan over
medium heat. Add oil. When hot, add garlic and onions to pan
and saut6 5-7 minutes, or until onions soften and caramel
ize. Add meat to pan. Saute over medium high heat, until
meat is browned, about 6-8 minutes. Drain grease. Season
mixture with salt and pepper. To assemble pizzas, spread Vi
cup Freschetta Build & Bake Traditional Pizza Sauce evenly
over each Freschetta Build & Bake Traditional Crust. Sprinkle
each pizza with Vi cup of Freschetta Build & Bake Premium
4-Cheese Blend. Divide meat mixture between pizzas, spread
ing evenly. Cover meat with remaining shredded cheese. Finish
pizzas with cheese triangles placed in a circular pattern on top.
Bake each pizza on a cookie sheet on the middle oven rack for
16-19 minutes, or until the crust is golden brown, and cheese is
melted and beginning to bubble. For a crisper crust, place piz
zas directly on oven rack for the final 3-4 minutes of bake time.
Remove pizzas from oven and immediately sprinkle tomatoes
in the center of each pizza to finish the top.
Sundried Tomatoes and Chicken
Created by Chef Walter Potenza, makes 2, 12” pizzas
1 package (2, 12”) Freschetta Build & Bake Traditional
Crusts
1 cup (9 oz.) Freschetta Build & Bake Traditional Pizza
Sauce
1 package (12 oz.) Freschetta Build & Bake Premium 4-
Cheese Blend
3 cups (10 oz.) rotisserie-style, grilled, or baked chicken
To taste kosher salt and pepper
2 tablespoons olive or vegetable oil
12 whole (3 oz.) sundries tomatoes packed in oil, sliced in
strips
3 large scallions, sliced on an angle
Preheat oven to 400 degrees. Spread V 2 cup Freschetta Build
& Bake Traditional Pizza Sauce evenly over each Freschetta
Build & Bake Traditional Crust. Sprinkle each pizza with about
y 2 CU p of Freschetta Build & Bake Premium 4-Cheese Blend.
Pull chicken from bone in thick, chunky strips discarding skin,
fat and bone. Toss with seasonings and oil, evenly coating
pieces. Divide chicken over each pizza, top with the sundries
tomatoes, remaining cheese and scallions. Season with salt and
pepper. Bake each pizza on a cookie sheet on the middle oven
rack for 16-19 minutes, or until the crust is golden brown, and
cheese is melted and beginning to bubble.
Pan-Seared Shrimp & Eggplant Pizza
Created by Chef Kent Rathbun, makes 2, 12” Pizzas
6 tablespoons olive oil, divided
14 oz. shrimp, medium to large size, raw, peeled, tails
removed
2 teaspoons kosher salt, divided
1 teaspoon pepper, divided
1 medium (6-7 oz.) Eggplant, peeled, sliced in discs
thick
1 tablespoon butter or margarine
1 large zucchini, yellow or green, sliced in l A”thick coins
1 package (2, 12") Freschetta Build & Bake Traditional
Crusts
1 cup (9 oz.) Freschetta Build & Bake Traditional Pizza

Cheese Blend
6 oz. goat cheese, crumbled
10 small basil leaves, fresh
Preheat oven to 400 degrees. Pour 3 tablespoons of olive
oil into a medium bowl. Add shrimp, toss to coat with oil.
Season with salt and pepper. Heat large skillet over medium
high heat, then add shrimp. Saute and turn shrimp until
pinkish, 1-3 minutes. Remove shrimp from skillet and cover.
Brush eggplant discs with olive oil, and sprinkle with salt
and pepper. Place the eggplant in skillet over medium heat.
Sear one side, flip, and sear second side. Cook over low heat
for 2-3 minutes, or until eggplant softens. Remove from skil
let. Add butter to skillet, melt over medium heat. Add zuc
chini and sear until lightly golden, turning coins once, and
adding olive oil if needed. Cook until slightly soft, about 2-3
minutes. Season with salt and pepper. Remove from heat and
set aside. To assemble pizzas, spread Vi cup Freschetta Build
& Bake Traditional Pizza Sauce evenly over each Freschetta
Build & Bake Traditional Crust. Sprinkle each pizza with V 2
cup of Freschetta Build & Bake Premium 4-Cheese Blend.
Lay eggplant, then zucchini over top of cheese. Top with
remaining shredded cheese. Finish by placing shrimp on
