Combine the potatoes, onion,
Parmesan and flour, mashing
with a fork to mix thoroughly.
Beat one of the eggs and add it
to the potatoes, again making
sure everything is thoroughly
mixed. Shape the potatoes into
4 to 6 patties, cover and refrig
erate 4 or more hours. Beat
the additional egg and dip each
croquette into the egg and then
into the bread crumbs. Heat
about 1 inch of oil to medium
high in a skillet. Fry the cro
quettes until they are nicely
brown on both sides. Drain on
paper towels and serve imme
diately.

1 medium onion, chopped
2 tablespoons oil
1 large onion, chopped
1 rib celery, chopped
2 cups leftover roast beef,
cubed
2 large russet potatoes,
peeled and cubed
1/2 teaspoon rubbed sage
1 teaspoon salt
1/2 teaspoon black pepper
1 cup beef broth
In a large, heavy skillet cook
the onion and celery in the
oil over medium heat. (Cook
until tender but not brown.)
Add the roast beef and pota
toes. Dissolve the sage, salt and
pepper in the broth and pour
over the hash. Mix well and
cover. Cook over low heat stir
ring often until the potatoes are
done. (About 20 minutes)

Use leftover roast to make
your own Philly cheese steak.
Leftover roast beef (not pot
roast)
Extra virgin olive oil
Sliced onion
Sliced bell peppers
Sliced mushrooms
Easy melt white American
cheese
Split Italian roll, toasted
Hot or sweet picked pep
per slices
Slice the roast thinly and
set aside.
Put a little olive oil in a skil
let and saute the onion, peppers
and mushrooms. Add the sliced
roast beef and heat through.
Put the cheese on top of the
meat and vegetables and let it
melt. Scoop the filling into the
roll. Garnish with the pickled
peppers.
leftover Turkey Pot Pie
This is another recipe that
can be easily varied depending
on what you have on hand.
You could use leftover gravy
perhaps stretching it with some
cream. You could use peas and
carrots rather than mixed veg
etables, and so on.
1 tablespoon butter or
margarine
1 medium onion, chopped
1 1/4 cups chicken broth
2 tablespoons cornstarch
1/2 cup milk
1/2 teaspoon dried sage
2 cups cut-up cooked tur
key
1 10 ounce-package mixed
vegetables, thawed and
briefly steamed
Prepared pie crust
Preheat the oven to 375
degrees. Heat the butter or
margarine in a sauce pan and
saute the onions until translu
cent. Mix the cornstarch with
1/4 cup of chicken broth. Put
the remaining broth, the milk
and the sage in with onions
and whisk in the cornstarch
mixture. Bring to a boil stir
ring constantly until thickened.
Stir in the turkey and vegeta
bles.
Pour the filling into an 8 x 8
square casserole dish and cover
with the pie crust. Cut slots in
the crust to allow the steam to
escape. Bake about 30 minutes
or until the casserole is bubbly
and the crust is browned.
NOTE: Another use for
almost the same ingredients is to
cook the vegetables in a lot more
chicken or turkey broth and add
turkey and some cooked soup
noodles for turkey noodle soup.
