Grilled Honey-Soy Pork
Steaks
2 pork blade steaks, cut 1-
inch thick
2 small cloves garlic,
minced
2 tablespoons finely
chopped onion
2 tablespoon lemon juice
2 tablespoon soy sauce
1 tablespoon honey
Combine all ingredients
in a self-sealing plastic bag;
seal bag and place in refrig
erator 4-24 hours. Remove
steaks from marinade, dis
carding marinade. Grill over
medium-hot coals, 7 minutes
per side, turning once.

Prepare medium-hot

tle-style grill. Place pork
over indirect heat, cover grill
and grill for 1 1/2-2 hours,
until internal temperature,
measured with a meat ther
mometer, registers 150-155
degrees F. Meanwhile, for
sauce, in a small bowl com
bine chili sauce, vinegar,
lemon juice, mustard and
garlic; mix well. Brush pork
frequently with sauce during
the last hour of grilling time.
Let pork rest for 10 minutes
before slicing to serve.
Serves 8-12.
Wine suggestion: Serve
with well-chilled beer or a
chilled Chardonnay

Grill-roast a fresh leg of
pork for something different
from the grill. Serve grilled
pork in sandwich buns with
corn and black beans salad,
macaroni salad, sliced toma
toes in vinaigrette.
Maple-Mustard Country-
Style Sparerlbs
6 large country spareribs
(about 4-1/2 pounds)
3/4 cup maple syrup
3/4 cup coarse grained
mustard
1/3 cup plus 1 tablespoon
packed dark brown sugar
2 teaspoons Tabasco
2 teaspoons soy sauce
Salt and coarse ground
black pepper
Mix maple syrup, mus
tard, brown sugar, hot
sauce, and soy sauce. Set
glaze aside. Create indirect
fire with foil drip pan half
filled with water. Lay ribs
on rack over drip pan and
brush with glaze. Cover and
cook for 1 hour 15 minutes,
turning and basting every
15 minutes. Move ribs to
hot side of grill. Brush with
glaze, cover, and grill for
5 minutes. Repeat, turning
and basting, until ribs are
tender and brown (about 20
minutes). Season with salt
and pepper and serve.

Back Pork Ribs
2 racks of baby back pork
ribs (about 1-1/2 lbs. per
rack)
1 12-oz. jar prepared mes
quite-flavored marinade
3 bay leaves
1 whole medium onion,
peeled
1 cup prepared barbecue
sauce (mild or spicy)
1/2 cup brown sugar
In a large stockpot, place
both racks of ribs; add
enough water to cover ribs.

Pork Ribs
2 racks of baby back pork
ribs (about 1-1/2 lbs. per
rack)
1 12-oz. jar prepared mes
quite-flavored marinade
3 bay leaves
1 whole medium onion,
peeled
1 cup prepared barbecue
sauce (mild or spicy)
1/2 cup brown sugar
In a large stockpot, place
both racks of ribs; add
enough water to cover ribs.
Add marinade, bay leaves
and onion. Bring mixture
to a boil over high heat.
(This will create foam on
top.) Reduce to medium-low
heat; simmer 45 minutes or
until ribs are just tender.
Remove ribs from cooking
liquid; drain on rimmed bak
ing Sheet.
Heat grill to medium
heat (about 350 degrees F.).
Meanwhile, in a small mix
ing bowl, stir together the
barbecue sauce and brown
sugar.
Brush over both sides of
ribs. Place ribs on grill, bone
side down, close lid. Grill for
7 minutes, turn and grill 7
minutes more
