Caviar d'Auberglne
(This is a great appetizer.)
1 large eggplant (about 18
ounces)
. 2 tablespoons fresh lemon
.juice
. 1 garlic clove, minced
• 1 tomato, chopped
■ 1 teaspoon salt
1/4 teaspoon pepper
• 1 tablespoon chopped
' fresh basil
’ 1/4 cup olive oil
Preheat the oven to 375
degrees. Prick the eggplant
all over with a fork and place
in a baking pan. Bake about
. 45 minutes or until the skin
* is wrinkled and the eggplant
' is soft. Let the eggplant cool
slightly. Cut the eggplant in
half, peel and cut into chunks.
Put the lemon juice, garlic,
tomato, salt, pepper and basil
in the food processor and pulse
several times. Add the eggplant
and olive oil. Process until the
eggplant is finely chopped and
the olive oil is incorporated.
Serve with crackers.

Jerk Pork Chops
6 4-ounce boneless center
cut loin pork chops, about
1/2-inch thick
1-1/2 teaspoons ground
allspice
3/4 teaspoons salt
1 teaspoon dried thyme
1 teaspoon ground cori

1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon garlic powder
1/4 teaspoon cayenne pep
per
2 tablespoons vegetable
oil
Combine all seasonings
and oil in a small bowl; mix
to blend. Spread paste mix
ture on both sides of each
pork chop. Place pork chops
in a self-sealing plastic bag or
baking dish and cover. Chill
for several hours or over
night I 'in refrigerator. Place
chops on rack in broiler pan;

Preheat the oven to 400
degrees.
Wash and pare the the egg
plant, cut crosswise into 1/2
inch slices. Combine the egg
and water. Dip the eggplant
slices into the egg mixture,
then into the flour, turning
to coat both sides.
Heat the oil in a large
skillet. Cook the eggplant,
half at a time, turning once
until browned on both sides.
Place the eggplant in a 2-
quart rectangular baking
dish. Sprinkle with the
Parmesan and top with the
spaghetti sauce and mozza
rella. Bake 10 to 12 minutes
or until heated through.
Carl d'Aubergine at Boeuf
2 oriental eggplant, or 1
medium round eggplant
Cooking spray
1 pound ground beef
2 tablespoons vegetable
oil
1 medium onion chopped
1/2 bell pepper, chopped
1 jalapeno pepper,
chopped
1 tablespoon curry powder
1 cup canned diced toma
to, with juice
1/4 cup water
1 teaspoon garlic powder
broil 4 to 5 inches from heat
for 5 to 6 minutes on each
side, until brown and chops
reach an internal tempera
ture of 160 degrees F.
Caribbean Barbecued Pork
Chops
8 bone-in pork rib chops,
3/4-inch thick
1/4 cup ground cumin
1 teaspoon Kosher or sea
salt
1 white onion, cut into 1-
inch pieces
2 yellow plantains, peeled
and cut into 1-inch pieces
2 large red bell peppers,
cut into 1-inch pieces
1 pineapple, cut into 1 112-
inch pieces
1 cup honey barbecue
sauce
8 wooden skewers
Soak wooden skewers
in water for 30 minutes.-
Prepare medium-hot grill.
Combine cumin and salt and
press evenly onto both sides
of pork rib chops. Add mix of
vegetables and fruit to each
skewer.
Grill chops and kebobs for
12-15 minutes, turning to

yogurt
Pare the eggplant and slice
into 1-inch rounds. Spray
them with cooking spray and
broil until they are brown on
both sides and tender. Let
the slices cool then cut into
cubes. Brown the ground
beef and drain.
Heat the vegetable oil in
a large, heavy skillet and
saute the onions and pep
pers until the onions are
translucent. Add the curry
powder and saute another
minute to develop the flavor.
Add the tomatoes, water and
other spices. Stir in the egg
plant and beef. Simmer on
low for twenty minutes. Stir
in the sour cream or yogurt.
Serve over rice.
Balsamic Grilled Vegetables
2 bell peppers
1 yellow squash, sliced
1 zucchini, pared and
sliced
1 medium eggplant, pared
and sliced
2 small onions, halved
olive oil for basting
2 tablespoons chopped
fresh basil
1 medium can diced toma
toes, drained
1/4 cup olive oil
1/4 cup balsamic vinegar
garlic powder
salt & pepper

ally until the skin is charred.

Pineapple Pork Chops
4 boneless pork chops, 112-
inch thick
4 teaspoons Jamaican Jerk
seasoning
1/3 cup hot pepper jelly
2 tablespoons pineapple
juice
1 teaspoon minced fresh
ginger
4 slices fresh pineapple
(cored, 1/2-inch thick) or
canned pineapple rings
Coat chops with jerk sea
soning; set aside for 5 min
utes. Meanwhile, microwave
jelly, pineapple juice and
ginger on High for 30 to
60 seconds or until melted.
Grill pork over medium-high
heat for 5 to 6 minutes per
side, turning once. Baste fre
quently with glaze. During
last 3 minutes of grilling
time, place pineapple rings
on the grill. Baste with jelly
mixture. Grill pineapple
until heated through. Serve
pork chops with pineapple.
Makes 4 servings.

ardous. Never allow children to attach ropes, leashes or similar items to play
equipment as children can strangle on these. Make sure metal slides are cool to
prevent children’s legß from getting burned. And always supervise children onplay
equipment to make sure they are safe.
Since grilling is a favorite pastime, designate the grilling area a “No Play Zone”
to keep the kids and pets well away until the grilling equipment is completely cool.
Place the grill at least 3 feet way from other objects such as the house and any shrubs.
When starting a fire in a charcoal grill, use only starter fluid designed especially for
that purpose. Before using a gas grill, check the connection between the propane
tank and the fuel line to be sure it is working properly and not leaking. Never strike
a match to check for leaks. If you find a leak, immediately turn off the gas and don’t
attempt to light the grill again until the leak is repaired. Never bring a barbeque
grill indoors or into any unventilated space. This creates a fire hazard and a carbon
monoxide poisoning hazard.
Chemicals are used for the pool and the lawn. Keep any chemicals used around the
home locked away in a dry place. Keep a data sheet on each chemical so you will know
how to deal with an accident should one occur involving a chemical.
Take time to plan for safety. Don’t let a visit to the emergency room spoil your
summer!
