Cooking with Joyce
Getting ready for Christmas cooking season

You never know how
important your oven is to
you until it quits working.
And what better time to
find out but Thanksgiving.
I usually do a lot of
baking during
Thanksgiving to
share with the
local sheriffs
department and
the homeless
shelter to thank
them for their
service.
Well this year
my oven decided
it wasn't going
to work, so
instead of hav
ing nice cakes to
share I had two cakes that
were done on the edges
and raw in the middle.
Needless to say. I didn’t
share any cakes this year
but promise to make up for
it between now and Christ
mas — as soon as my war
ranty company sends out
a repair person to fix my
oven — hopefully very
soon.
I shared Thanksgiving
with the Young family, and
instead of cakes I took my
cranberry fluff and pump
kin delight that I shared
with you last column. Both
were hits.
Leftovers were shared
with friends at work. They
were both hits.
Recently, Gary McLock-
lin made the mistake of
sharing this wonderful
recipe on his Facebook
page with his family and
friends.
Now everyone is expect
ing one for Christmas.
Gary is one of those guys
that really can cook.
I can understand why.
His mom was always a
great cook and has shared
many of her wonderful
recipes with me.
This recipe for a pie is
supposed to be sort of like
the girl scout cookie with
the same name.
Looks really yummy and
I, too, plan on making it
to share during
Christmas.
It seems very
simple to make.
Samoa Pie
Ingredients:
1 store bought
pastry pie crust
2 cups heavy
cream
1/4 cup sugar
8 oz. cream
cheese softened
1 cup powdered
sugar
Topping:
2 cups sweetened, shred
ded coconut, toasted
1 1/2 cups dulce de leche
or caramel, plus more for
drizzling
melted chocolate for
drizzling
Directions:
Preheat oven to 350
degrees. Place pie crust in
an 8 inch pie plate, cover
ing the bottom and edges
of the plate.
Crimp edges.
Bake until crust is light
ly golden, 7 to 9 minutes.
Set aside to cool.
In the bowl of a stand
mixer, beat heavy cream
and sugar until stiff peaks
form.
Transfer to a bowl and
wipe bowl to stand mixer
clean.
To bowl of stand mixer
add cream cheese, 1/2 cup
dulce de leche or caramel
and powdered sugar.
Fold whipped cream into
dulce cream cheese mix
ture until blended fluffy.
Spread remaining 1/2
cup dulce de leche or car
amel into bottom of pre
pared pie crust. Top with
dulce cream mixture.
Refrigerate pie until
firm, 5 to 6 hours.
Before serving make
topping: In a large bowl
mix together 1 cup toasted
coconut and 1 cup dulce de
leche or caramel.
Spread remaining 1/2
cup dulce onto chilled
pie then top with dulce
coconut mixture, pressing
down to make sure pie is
fully covered.
Lightly drizzle with
melted chocolate and more
dulce de leche or caramel.
I have this wonderful guy
in my life that has figured
out that I love to cook, so
when he finds something
he thinks sounds good he
sends it to me as a hint that
he’d like for me to try it.
I told him I was in the
process of putting together
all of my recipes to make
my Christmas goodies to
share with him and my
friends.
Since then he has been
sending me recipes.
Many of them I already
have and already make
every year such as Buck
eyes.
He knows I like simple
but good things.
This latest one for Pecan
Pie Bark I think I will be
adding to my list of reg
ular things to make each
year to share with others.
Looks good but simple to
make. This one is for you
Superman.
Pecan Pie Bark
Ingredients:
24 graham crackers
3 cups Pecan halves
1 cup unsalted butter
1 cup brown sugar
1/2 tsp. salt
1 tsp. vanilla extract
Directions:
Preheat the oven to 325
degrees and line a sheet
pan with parchment paper.
Lay graham crackers tight
ly across the parchment
paper.
In a large sauce pan
bring the butter, sugar, salt
and vanilla to a boil. Once
the sugar is melted, add the
pecans.
Cook for 5 minutes then
carefully pour the pecan
mixture evenly over the
graham crackers.
Bake for eight to 10
minutes.
Allow bark to cool com
pletely before cutting and
serving.
During this time of the
year I am a big pump
kin fan. I like the pump
kin spice flavor and have
found so many things
made with it.
My sweet little cousin
Morgan Gunter likes it
almost as much as I do
and has sent me many of
these. Trader Joe's is one
of our favorite places to
find these items.
I have found pumpkin
spice chips I plan on using
in cookies or something
as soon as I find the right
recipe.
So if you have a recipe
for a pumpkin chip cookie
send it my way.
In the meantime, my
boyfriend also sent me
another recipe for a Pump
kin Crunch Cake I will
try as soon as my oven is
fixed.
Pumpkin Crunch Cake
Ingredients:
1/2 box yellow cake mix
1 can (15 ounces) pump
kin puree
1 can (12 ounce) evapo
rated milk
4 eggs
11/2 cups sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ground ginger
pinch of cloves
Another Thanksgiving come and gone
1 tsp. salt
1 cup chopped pecans
1 cup butter, melted
Directions:
Preheat oven to 350
degrees.
Spray a 9X13 inch bak
ing dish with non-stick
spray.
In a large bowl beat
together the pumpkin,
milk, eggs, sugar and spic
es until well combined.
Pour into the prepared
baking dish. Sprinkle the
top with yellow cake mix.
I prefer a half box, but
use more if you want it to
be very “cakey.” Sprinkle
with the chopped pecans.
Pour the melted butter
evenly over the top of the
cake.
Bake for 60-70 minutes
or until the top is lightly
browned and the custard
is set.
Serve warm or cold.
Store in the refrigerator.

Another Thanksgiving is
in the books.
Another long weekend
of stuffing ourselves, shop-
til-you-drop marathons,
football, and afternoon
naps.
Now it's time to get into
the full-frenzied Christmas
mode.
Right?! We'll deck the
halls. We’ll wear festive
clothing. We’ll listen to the
sounds of the season.
It’s the most wonderful
time of the year!
As a kid, (as with most
kids!), Christmas was
always my favorite time of
the year.
Of course, there was the
anticipation of Christmas
parades, a visit with Santa,
and that magical moment
of my brother and I rac
ing into the living room
on Christmas morning to
see all the things under
the tree.
As I grew older, and some
of the magic was gone,
there were still so many
Santa to
visit library
Santa and Mrs. Claus will
be at the Statham Public
Library from 5:30-6:30 p.m.
on Dec. 8 for a reading of
“The Night Before Christ
mas,” some caroling and
then photo time for the kids.
The library will be col
lecting “food for fines”
during the month of Decem
ber.
Patrons can reduce their
fines by $1 for every can
of food they bring in. The
food will be collected by
the Statham Girl Scouts and
taken to a local food bank.

brother and I left home,
and while maybe
not as many sur
prises under the
tree, it was always
a special time just
the same.
As with most
families, we had
our way of doing
things, and it was
those traditions
that I learned to
treasure, even in
my early teens.
I can remember
the delicious aromas waft
ing from the kitchen, the
earthy smell of the cedar
trees, and the happy laugh
ter that flowed throughout
our home.
I remember the feeling
of goodwill toward men
that seemed to settle over
our lives, even though for
several holidays, I had had
two uncles on the other
side of the world in Viet
Nam.
The church music, the
manger scenes, the celebra
tion of the birth of Jesus,
held such won
der and awe, and
the live nativity
scene over in
Bethlehem was
one of my favor
ite things to see.
Having my
own child, and
now grandchil
dren, put a new
spin on the hol
idays, and it
has been such
fun creating the
magic for them to enjoy
as well.
On the surface, Christ
mas is much different these
days than when I was com
ing up, but the magic is
there for them, and they
are excited about the same
things I was at that age.
And they love to cele
brate the birthday of Jesus
as well, which is not so
common in our diverse
society as it once was.

The memories are vivid,
and as I have grown older
and the halls are less
decked, and the festive
attire traded in for jammies
and scrubs, I often take a
walk down the hallways
of my mind and enjoy the
sights, smells, and feelings
all over again.
