in many other respects, the Chinese
are now taking to the summer cus
tom of ice craem and iced drinks
and especially iced tea. A short time
ago ice cream was obtajnable only
in Peking in the Legation Quarter
hotels and foreign communities in

shops that sell it are legion and the

Bottled soda water, pop and lem
onade can be bought anywhere, Iced
‘tea stands, with dirty glises An@!
swarming flies, are frequent along
the streets even in inland Chinese
cities away from the tourists routes.
The wide spread imitatjion of the
foreigner’s custom of indulginng in
cold drinks, without a corresponding
imitation of the sanitary methods
employed by the foreigner in their
preparation, promises serious conse
quences. Drinking water in most
Chinese cities comes from polluted
wells or filthy rivers, and the an
cient custom of drinking only boil
ing water or boiling tea has been
the salvation of the Chinese, In tak
ing to cold drinks they are abondon
ing this old protective custom.
The iced tea stands are the most
dangerous of the innovatjons. The
vender gets his ice supply from some
stagnant pond perhaps in the mid
rle of the village. This ice is put into
the tea and not around the contain
er. Thus the nativee unthinkingly
takes with his new drink water tiat
in former days he would not have
dreamed of drinking without its
fisss having been boiled. Doctors
phedict that if the custom continues
