Next time you make a cake add
half a cupful of leftover mashed po*
tatoes to the other ingredients and

the potatoes to the creamed sugar
and butter (or substitute.) If its a
'yolk of egg cake put in the potatoes
after the yolks have blended.
Try laying your thin slices of ba
con in a shallow pan and putting
them in a moderate oven. They will
be uniformly crisp and delicately
browned. When you take them out
of the oven lay the pieces on oiled
paper until you are ready to serve.
The fat that has been cooked out can
be used in frying hashed brown po
tatoes or chops.

Leave them in the refrigerator until
morning, then drain and dry them
with a cloth. Fry them quickly in
deep fat. The milk that they are
soaked in makes rich gravy.
