Sweet Pickled Vegetables
Boil 2 1-2 cups of vinegar with
1-2 cup of sugar, a bit of bay leaf,
a piece of cinnamon and a few
cloves (or 20 minutes. Add 3 cups
of cooked shredded carrots, cooked
sliced bects or other cooked sliced
vegetabl:s or mixture of vegetables
or mixture of vegetables. The vine
gar shoald cover the vegetables.
Simmer 2kout five minutes and seal
in hot sterilized jars.
Green Tcmato Pickles
Cut 1 peck of green tomatoes in
i-4 inch slices. Cut 1 dozen large
white >aions in slices. Pack in al
ternate layers iin an earthen jar
bhaving » layer of salt between thel
layers of vegetables. Let stand over
night. D:ain off brine. Repack the!
vegetables and cover with vinegarl
sealded with 8 or 4 pods of red pep
per and a spice bag with 1 cup of
mixed sp:ces. !
