After two weeks of pain with my back, I went to
see my surgeon is Macon, and he feels like the pain I
am experiencing is sciatica. He ordered six weeks of
physical therapy which will start on Thursday. I am
hopeful that this will help because the pain has be
come debilitating.
Yesterday, I did get in the kitchen and make a
shepherd’s pie so that we would have something nu
tritious to eat for a couple of days. I would like to
share this recipe this week because it is a snap to pre
pare and just right for several meals for two people.
Christine brought out barbeque, slaw, and Bruns
wick stew on Saturday, and I think we can make it
on meals for several days. The Irish soda bread and
strawberry trifle are also nice to have around.
SHEPHERD’S PIE
You’re Still The One
Robert Harris and his wife Catherine renewed their wedding vows earlier this week. They will
celebrate 70 years of marriage in November 2021. Robert and Catherine, from Thomaston, now
reside in Fayetteville at Heartis Senior Living.
1 pound lean ground beef
1 (1.61 ounce) package Pioneer brown gravy mix
1 (14.25 ounce) can sliced carrots (use l cup), drained
1 (15 ounce) can early June peas (use 3 /4 cup),
drained
1 (15.25 ounce) can whole kernel corn (use 3 /4 cup),
drained
1 (3.25 ounce) package Idahoan signature russets
mashed potatoes mix
In a large skillet, brown ground beef; drain. Mix
the brown gravy mix with 2 cups of water and add to
skillet with ground beef and stir until thickened. Add
l cup of sliced carrots, 3 /4 cup of peas, and 3 /4 cup of
corn. Stir until mixed and pour into a 9 x 9-inch
greased baking dish. Mix the mashed potatoes ac
cording to the directions on the package, adding a
little additional milk in order to achieve a mixture
that will be easy to spread. When I mixed my mashed
potatoes, I used salted butter and did not have to add
any salt to the potatoes. I did use a tablespoon of dry
ranch dressing mix for a little added flavor. Spread
the potatoes over the top of the ground beef mixture
and bake in a 350-degree oven for 30 minutes.
IRISH SODA BREAD
1 3 /4 cups buttermilk
1 large egg
4 V4 cups all-purpose flour
3 tablespoons granulated sugar
1 teaspoon baking soda
1 teaspoon salt
5 tablespoons unsalted butter, cold and cut into
cubes
1 cup raisins
Preheat oven to 400 degrees. Line a baking sheet
with parchment paper or Silpat sheet. Whisk the
buttermilk and egg together; set aside. Whish the
flour, granulated sugar, baking soda, and salt to
gether in a large bowl. Cut in the butter using a pas
try cutter or fork. Work the dough until coarse
crumbs form; stir in raisins. Pour in the buttermilk
and egg mixture. Gently fold the dough together until
dough is too stiff to stir anymore. With plenty of flour
on hands, work the dough into a 9-inch circle. Trans
fer the dough to the prepared baking sheet. Using a
sharp knife, cut an X into the top. Bake until the
bread is golden brown and center appears cooked
through, about 35 to 45 minutes. If the bread is get
ting too dark, cover with aluminum foil. I usually
have to do this in the last 10 minutes of baking. Re
move from oven and let bread rest for a few minutes
before transferring to a cooling rack. Because this
bread contains no preservatives, it won’t last more
than a couple of days at room temperature. Covering
and storing in the refrigerator will extend the life of
the bread.
STRAWBERRY TRIFFLE
1 angel food cake
1 small tub whipped topping
1 large block cream cheese
1 can sweetened condensed milk
2 containers of strawberries, de-stemmed and sliced
In a bowl, mix the whipped topping, cream
cheese, and sweetened condensed milk. Cut cake
into cubes and layer cake, strawberries, and cream
mixture for three layers, ending with the straw
berries and cream cheese.
