What a beautiful day that
we have been given to re
member the people who
fought for this country and
did not make it home. I am so
thankful to all of them who
died so that we can enjoy so
many freedoms, which are
taken for granted by so many.
Even though the country is in
a bit of turmoil, I believe that
what is just and right will pre
vail. Be safe and enjoy this
day.
HASH BROWN
QUICHE
3 cups frozen loose-pack
shredded hash browns,
thawed
1/3 cup butter or margarine,
melted
1 cup diced fully cooked ham
1 cup shredded cheddar
cheese
Va cup diced green pepper
2 eggs
V2 cup milk
1/2 teaspoon salt
Va teaspoon pepper
Press hash browns be
tween paper towels to remove
excess moisture. Press into
the bottom and up the sides
of an ungreased 9-inch pie
pan. Drizzle with butter. Bake
at 425 degrees for 25 mi
nutes. Combine the ham,
cheese, and green pepper;
spoon over crust. In a small
bowl, beat eggs, milk, salt,
and pepper. Pour over all.
Reduce heat to 350 degrees,
bake for 25 to 30 minutes or
until a knife inserted near the
center comes out clean. Allow
to stand for 15 minutes before
cutting.
RICE PII .A1
1 cup uncooked long grain
rice
1 tablespoon cooking oil
1 V2 to 2 tablespoons dry
onion soup mix
Va teaspoon pepper
1-2/3 cups boiling water
1 cup frozen peas
In a large skillet, brown
rice in oil, stirring constantly.
Blend in soup mix and
pepper. Stir in water, bring to
a boil. Reduce heat, cover,
and simmer for 25 minutes or
until the rice is tender. Stir in
peas. Cover and cook for 5
minutes. Serve immediately.
When I cook this dish, I use
canned peas and do not cook
any longer than is necessary
for the peas to get hot.
QUICK RICE
PUDDING
4 cups milk
1 egg, beaten
1 package (3 ounces) cook
and serve vanilla pudding
mix
1 cup uncooked instant rice
Va cup raisins
Va teaspoon ground cinna
mon
1/8 teaspoon ground nutmeg
In a saucepan, combine
milk, egg, and pudding mix.
Add rice and raisins. Bring to
a boil over medium heat, stir
ring constantly. Remove from
the heat, cook for 5 minutes,
stirring twice. Pour into des
sert dishes or a serving bowl.
Serve immediately or cover
with plastic wrap. Sprinkle
with cinnamon and nutmeg.

The parents of Dillan Edgar Knight and Brianna
Nicole Helton are happy to announce the wedding en
gagement of the couple. Helton is the daughter of Tif
fany Turner and Keith Helton, Jr. Knight is the son of
Tracey Knight and William “Bubba” Byrd.
Both natives of Thomaston, Helton is a 2017 grad
uate of Upson Lee High School, and Knight is a 2018
graduate of ULHS.
The couple is scheduled to be married on Sept. 25
at Camp Thunder in Molena.

Upson High Class of’91
Celebrates 30 Years
Members of the Upson High graduating Class ofiggi met last Saturday to cele
brate their 30-year graduation anniversary. After meeting at their old high
school, which now serves as Upson Lee Middle School, participants enjoyed com-
radery at Greatest Generation Memorial Park while sporting matching T-shirts
with “Upson High Yellow Jackets” emblems. While the front of the T-shirts reads,
“Class ofiggi, ” the back side reads, “30 years and still Upson High until I die. ”
