As I sit at the computer on
this Sunday evening, I am look
ing out the window that faces
the pasture on the west side of
the house. I can say that after
the drenching rain that we had
last night, I have never seen
these pastures so green. I have
not planted that many flowers
this year, but the ones that I do
have looked great this morning.
This week I would like to
share a recipe for an Italian beef
roast that anyone should enjoy
who likes Italian food. I love to
have this with some little green
peas and buttered egg noodles.
Also, when you slice this, you
can make a delicious, toasted
sub sandwich. Simply split a sub
bun, add the meat, cover with
shredded mozzarella cheese,
and toast under the broiler.
One of our favorite sweets is
cooked butterscotch pudding,
and I would always buy the
boxed mix to do this. Now, it
seems that I can no longer find
this in the store, only the instant
pudding. Some people cover the
pudding so that a skin does not
form after they cook it, but I
don’t because we think that is
the best part of the pudding.
ITALIAN ROAST BEEF
2-pound beef roast, your choice
of cut
2 teaspoons crushed fresh garlic
V4 teaspoon black pepper
V2 cup chopped onion
1 cup fresh, sliced mushrooms
16 ounces of crushed tomatoes
1 can (6-ounce) tomato paste
V4 cup water
2 teaspoons dried Italian sea
soning
1 3 /4 teaspoons beef bouillon
granules
Rub the roast with the
crushed garlic and then brown
the roast in a small amount of
oil in a skillet. Place the roast in
slow cooker and cover with the
onions and mushrooms. Com
bine the crushed tomatoes, to
mato paste, water, Italian
seasoning, and bouillon cubes in
a large bowl and pour over the
roast. Cover and cook on low for
eight hours.
BUTTERSCOTCH
PUDDING
1/3 cup cornstarch
V2 cup firmly packed light
brown sugar
V2 cup firmly packed dark
brown sugar
V2 teaspoon salt
2 cups whole milk
1 cup half-and-half
3 large egg yolks
3 tablespoons unsalted butter,
cut into small pieces
1 teaspoon vanilla extract
In a medium saucepan, stir
together the cornstarch, sugars,
and salt. Gradually whisk in the
milk and half-and-half. Place
over medium heat and bring to
a boil, whisking constantly. Re
move the pan from the heat. In
a medium heat-resistant bowl,
whisk the egg yolks until
smooth. Whisk about one cup of
the hot milk mixture into the
yolks. Return this mixture to the
saucepan and cook over me
dium heat, whisking constantly,
until the mixture comes to a
gentle boil. Continue to boil,
whisking constantly, for one mi
nute. Immediately remove the
pan from the heat and whisk in
the butter pieces until they are
completely melted. Whisk in the
vanilla. Cover the pudding with
waxed paper and cool to room
temperature.
