All of the folks who love hot
weather should really be happy now
because it has gotten just too hot and
humid for me outside. I had been
walking early in the morning, but the
heat has gotten to be too much even in
the early hours. It is at this point that
1 start yearning for fall and a little
cooler temperatures in the morning
and evening.
Other than for the beautiful
flowers of summer, I am thankful for
the bounty of fruit during the summer;
and, blueberries are one of my favorite
fruits. I like to freeze blueberries right
after picking without washing them so
that there will not be any condensation
and eat them frozen for a little snack.
My favorite recipe to use is one for
a dump cobbler made by mixing one
stick of melted margarine, one cup of
self-rising flour, one cup of milk, one
cup of sugar, and pouring over blue
berries in baking dish. Bake at 350 de
grees for 30 minutes or until the top is
a dark golden brown. This works well
with almost any fruit, but Miss Burdie
Brannon gave me this recipe many
years ago to use for blackberries.
BLUEBERRY COFFEE CAKE
2 cups plain flour
■V4 cup granulated sugar
2 teaspoons baking powder
V4 teaspoon salt
1 egg, beaten
V2 cup milk
V2 cup butter, softened
1 cup blueberries
1 cup coarsely chopped pecans
TOPPING:
V2 cup sugar
V2 cup plain flour
V4 cup cold butter
In a mixing bowl, combine flour,
sugar, baking powder and salt. Add
egg, milk, and butter; beat well. Fold
in blueberries and pecans. Spread into
a greased 9-inch square pan. In
another bowl, combine sugar and
flour, cut in the butter until crumbly.
Sprinkle over the batter. Bake at 375
degrees for 35 to 40 minutes or until a
wooden toothpick comes out clean. I
always toss my blueberries with a little
sugar or flour before adding them to a
recipe to keep them from sinking too
much.
BLUEBERRY SAUCE
2 cups fresh blueberries
1 tablespoon cornstarch
1/8 teaspoon cinnamon
V2 cup water
V4 cup sugar
1 teaspoon lemon juice
Add water to blueberries and heat
until warm. Combine cornstarch,
sugar, and cinnamon and stir into the
berry mixture. Stir and cook until mix
ture is thickened and clear. Add lemon
juice and stir. Use as a topping on ice
cream, pudding, pancakes, waffles,
French toast, or pound cake.

Disney’s The Little Mermaid Jr. Playing at U-L Fine Arts Center in August
Disney’s The Little Mermaid,
Jr., presented by The Thomaston-
Upson Arts Council, will be at The
Upson-Lee Fine Arts Center on Fri
day, Aug. 13 at 7 p.m., Saturday,
Aug. 14 at 2 p.m. and 7 p.m., and
Sunday, Aug. 15 at 2 p.m.
The 65-minute musical, de
signed for students kindergarten
thru 12th grade, is based on the
2008 Broadway production and the
1989 animated feature film. The
TUAC Summer Junior Theatre cast
consists of approximately 65 stu
dents led by co-directors Chadwick
Loyd and Lauren Hoyal.
This classic Disney title contains
all the songs from the Academy
Award®-winning, animated feature
film, as well as three new songs from
the Broadway show.
The Little Mermaid, Jr. takes
place in a magical kingdom beneath
the sea, where a beautiful young
mermaid named Ariel longs to leave
her ocean home to live in the world
above. But first, she will have to defy
her mother, the queen of the sea, es
cape the clutches of an evil sea
witch, and convince a prince that
she is the girl with the perfect voice.

BLUEBERRY BUCKLE
4 tablespoons butter
■V4 cup sugar

3 /4 cup milk
2 cups plain flour
2 teaspoons baking powder
2 cups blueberries
V4 cup butter
1/2 cup sugar
1/8 cup plain flour
1/2 teaspoon cinnamon
In a large bowl, cream together the
4 tablespoons butter, 3 A cup sugar,
and egg. Add the milk, 2 cups of flour,
and baking powder. Combine well.
Gently fold in the blueberries. Pour
batter into a greased 8x8-inch pan. In
a small bowl combine the remaining
ingredients and stir gently so that the
mixture is crumbly. Sprinkle over
batter. Bake at 350 degrees for 45 mi
nutes, or until golden brown. This is so
good with a dollop of fresh whipped
cream, and vanilla ice cream is good as
well.
