On this gloomy Sunday even
ing, Mac and I have just about con
sumed all of the leftovers from our
Thanksgiving meal. As much work
as getting this meal cooked and to
gether is, I don’t mind having all
the leftovers and not having to cook
for a few days. I plan to have turkey
hash tomorrow with all the little
pieces of turkey left over, and I used
the remainder of the ham yesterday
to make a ham and potato strata.
I did have to make another
batch of the cranberry sauce be
cause it disappears quickly. I make
mine with fresh cranberries which
have been boiled to popping,
chunky fruit cocktail, mandarin or
anges, apple pie filling, and enough
sugar to sweeten. My folks did not
like it the first time that I made it
years ago because they had been
accustomed to the stuff that comes
out of the can with the rings around
it. I think that I have most of them
on board with this newer recipe.
If you are like me, what I cook
from now until Christmas will be
those recipes that are quick and nu
tritious because time becomes a
precious commodity this time of
the year. The recipe for the ground
beef stew is basic, and you can add
so much to it to suit your taste. I
add crushed tomatoes, peas, and
sometimes I add some cooked
elbow macaroni. The cherry pecan
bars are on my Christmas menu for
this year because I have not cooked
them in at least a decade. I think I
have gotten in a rut with the des
serts and need to shake it up a little
this year.
GROUND BEEF STEW
l pound lean ground beef
1 can condensed beef broth
Dash of pepper
2 large potatoes, diced
l teaspoon salt
V2 cup finely chopped onion
l can cream style corn
In skillet, brown ground beef
and chopped onion; drain. Add the
rest of the ingredients and mix well.
Cover and cook over low heat for 25
minutes, stirring occasionally. This
is a great base for making a stew
and adding other ingredients such
as tomatoes or beans. I always add
more salt than the recipe suggests
along with just a little sugar.
CHERRY PECAN BARS
1 V4 cup plain flour
1 cup softened butter
V2 teaspoon salt
1 (2 ounces) jar cherries
V2 cup pecans, chopped
V2 cup sugar
2 eggs
V2 teaspoon vanilla
V2 teaspoon baking powder
V2 cup coconut (optional)
Mix flour, sugar, and butter
until crumbly. Press into a greased
13 x 9 x 2-inch pan. Bake at 350 de
grees for 15 to 20 minutes or until
very lightly browned. Blend eggs,
sugar, salt, baking powder, and va
nilla. Drain and chop cherries, sav
ing juice. Stir in chopped cherries
and nuts into egg and sugar mix
ture. Place on top of baked crust.
Return to oven and bake 25 mi
nutes; cool. Frost.
FROSTING:
1 tablespoon softened butter
1 cup confectioners’ sugar
Enough cherry liquid for frosting
consistency
Spread frosting over cooled
cake.

Places like the Ritz Theatre,
Hometown Printers, WTGA, Baby
Lane’s, Jin’s Beauty, and Pasley Fu
neral Home’s former location across
from the post office were all sites for
the mule sheds. Across the street from
the Thomaston-Upson Archives, in
what is now the Thomaston Health
Spa at the corner of East Lee and
Center Streets, stood another.
Ernest Thomas Black, originally
from The Rock, was a two-time mayor
of Thomaston (1918-1921, 1924-
1925), peach grower, and successful
livestock dealer. In December 1934,
he and Will Trice brokered a deal with
President Franklin Delano Roosevelt
for the sale of two mules, which the
President named “Tug” and “Hop”
after two of his aides, Harry Hopkins,
Secretary of Commerce, and Dr. Rex-
ford Guy Tugwell, Undersecretary of
the Department of Agriculture.
President FDR was said to be de
lighted to have appropriately named
them as one can hop while the other
tugs.
The trade added to Thomaston’s
already lucrative livestock industry. At
one point, this area was known as
Mule Capital of the South, with the
largest distribution center south of At
lanta. The square was apparently so
crowded with mules that wagons and
buggies “had a tough time” crossing
the streets.
The trade eventually died out as
the boll weevil invaded cotton crops
across the South and the introduction
of farm tractors eliminated much of
the need for the animals. E.T. Black
passed away suddenly in May 1937. A
few years later, his stable was de
stroyed by fire, eliminating one of the
last traces of the once thriving indus
try.

Birth Announcement
Master Stewart
Tyler and Lucy Stewart welcomed their first child,
Thaddeus “Thad” Clay Stewart, 8 pounds 7 ounces
and 20.5 inches long, on Thanksgiving Day. Tyler is
the recruiting specialist for Tidal Wave and Lucy
teaches eighth grade ELA at Upson-Lee Middle School.
