PTC Staples Celebrates Grand Re-Opening
Fayette County Chamber of Commerce hosted a ribbon cutting ceremony
for the grand re-opening of Staples in Peachtree City. Although the store has
been operating in PTC for several years, general manager Daniel Poe says
he is excited to debut the store’s fresh remodel and layout. Staples is located
at 225 Market Place Connector.

So, quite a few years ago
(Bush, Sr. was President), I
was a young newlywed and
attended many church pot-
lucks (or pitch-ins or carry-
ins - whatever you call
them), and one of the favor
ite items for many of us was
Chocolate Eclair Dessert.
So, I did whatever a 20-
something who did not
cook much does - I asked
for the recipe and put it
away in the cute box I was
given at the wedding
shower.
Well, real life set in, and
I began to learn how to cook
since a first-year engineer
and a medical receptionist
were not fine dining much.
Quickly I realized how
easy this was to create. I
also discovered that many
of the older church ladies
called this “Paul Neuman” -
since it was so dreamy and
wonderful. I loved that mo
niker! Several years went
by, I began to have a few
children (three), and I con
tinued to make and take
this dreamy dessert. As my
children got to the age
where they wanted to help,
1 told them the story behind
the name.
However, in the early
2000s, to a six- and an
eight-year-old girl, Paul
Neuman meant a lot of
nothing. The nation was
gripped by the High School
Musical craze, so I renamed
this the “Zac Efron” dessert.
My girls “totally” knew that
this meant.
To this day, and even so
recently as last week, my
girls and I (together and
separately) create this yum-
miness. Enjoy some cre
ative time with your littles
(for they will not stay little
long) and give it whatever
name fills the title best for
your family!
ZAC EFRON
2 packages French vanilla
instant pudding
3 cups milk
Box of graham crackers
12 oz Cool Whip
Chocolate Icing:
31/2 cups powdered sugar
V2 cup cocoa
1 stick unsalted butter
V2 cup milk (whole or heavy
cream)
1/8 tsp salt
Mix pudding and milk
and let thicken for a few mi
nutes; gently fold in Cool
Whip and set aside. Take a
9xi3-inch pan and layer
graham crackers, V2 the
pudding, graham crackers,
remainder of pudding, and
another later of graham
crackers. Put in fridge while
making the chocolate icing
(for at least 30 minutes).
ICING:
Beat butter at medium
speed until creamy. Add
cocoa, vanilla, and salt and
beat until smooth; add 1
cup powdered sugar, beat
ing after each cup until
mixed. Slowly beat in 3 tbsp
milk/cream and increase
speed to high and beat 1 mi
nute. IF NEEDED: add 1
tbsp milk/cream at a time
until to the consistency you
like. Spread over the top
layer of crackers and leave
in fridge for a few hours (if
it lasts that long) and enjoy!

My best advice is to use
a few minutes (put the
phone down and just sit at
the table), while you and
your partner quickly write
down 10-15 main dishes.
Don’t overthink this - if you
love chicken burritos, pot
pie, or pork chops, write
that down. Then survey the
pantry and make decisions
to do three per week. Shop
for what you need, and
even make enough for
some leftovers. Don’t freeze
the proteins so they are
ready to cook on whatever
night you are ready to
cook.
Planning just three
meals will give you flexibil
ity if something jumps into
an evening (parents pop
ping in or friend gath
ering), you can use it the
next day. Don’t try and be
Gordon Ramsay - he’s
amazing but not realistic
for most of us! Enjoy a sit-
down dinner with your
people!
