PORK CHOPS WITH ONIONS AND RICE
Ingredients
6 pork chops
2 onions (sliced thin)
2 cups cold water
11/3 cups of rice (pre-cooked type)
1/8 teaspoon marjoram (optional)
2 teaspoons salt
Trim excess fat from pork chops leaving about l A inch only. Place trimmings in a
large skillet over medium heat to make about one tablespoon of melted fat. Add chops
and brown on each side for about five minutes. Remove chops. Put sliced onions in
skillet and cook stirring often for about 5 minutes or until lightly browned. Add
water, rice and salt. Mix well. Place chops on top. Cover. Bring to a boil. Then cook
over low heat for 18 to 20 minutes or until tender.
M-M-Good! This can be cooked ahead of time!
PICKLED SHRIMP
Ingredients:
2to2 1 /2 pounds shrimp in shells
V2 cup celery tops
V4 cup mixed pickling spices
1 tablespoon salt
2 cups sliced onions
7 or 8 bay leaves
Cover shrimp with boiling water; add celery tops, pickling spices and salt. Cover and
simmer for 5 minutes. Drain. Then peel and devein under cold water. Alternate
cleaned shrimp, onions and bay leaves in shallow dish.
Combine ingredients for pickling marinade. Pour over shrimp. Cover and chill for at
least 24 hours. Drain. Remove bay leaves. This is delicious.
PICKLING MARINADE:
IV2 cups salad oil
% cup white vinegar
3 tablespoons capers and juice
2V2 teaspoons celery seed
IV2 teaspoons salt
Few drops bottled hot sauce

Pacelli High School
STAR Student Named
Michael Tully, a senior, was
named Pacelli’s STAR Student at a
school assembly on Thursday, February
15. He chose Major Robert Lagen as his
STAR Teacher. Members of the
Columbus Chamber of Commerce,
which sponsors the local Student
Teacher Achievement Recognition
program, attended the assembly where
they spoke on the STAR awards and
announced the winner.
A Star Recognition Banquet was held
on Friday, February 23, for the purpose
of honoring the STAR Students and
Teachers from each school within the
Muscogee County School System, and
announcing the System STAR Winner.
Mike Tully, Major Robert Lagen, and
Reverend Robert Mattingly, principal of
Pacelli, attended the banquet. Each
school Star Student presented a
one-minute speech at the banquet.
Mike was selected STAR Student on
the basis of receiving the highest
Scholastic Aptitude Test score, and
having a scholastic average for the first
semester of his senior year in the upper
ten percent of his class. He plans to
attend the University of Georgia and
major in Business Administration.
Major Robert Lagen is a Math and
Physics instructor at Pacelli. He has
taught Mike for the past two years.
Mike Tully and Major Lagen were
presented certificates recognizing their
selection as STAR Student and Teacher.
Shepherds in the Wings
Waitress School Planned
Some of the finest restaurants in Savannah frequently advertise for “experienced
waitresses.” If enough people are interested, Savannah Vocational School will begin a
class for the training of waitresses. It is possible that classes would be held in the
evening. It is almost certain that those completing the course could be placed. Expense
for the whole course would not be more than $3.00. Would you please ask any
interested persons to call the Employment Center, phone 232-2082, Monday through
Friday between 9 a.m. and 5 p.m.
Priests’ Senate Meeting
The Priests’ Senate of the diocese will meet March 15 at 11 a.m. in the parish hall of
Immaculate conception parish, Dublin.
Personnel Committee
The monthly meeting of the diocesan personnel committee will be held at the
Chancery in Savannah at 2:30 p.m. March 13th. The meeting is open to all priests of
the Savannah diocese.
Aquinas Entrance Test
The following students ranked in the top ten percent of those who took the
entrance test for Aquinas High School on February 10,1973. From St. Mary’s School:
Robert Boerner, Richard Brotherton, Katherine Griswald, Walter Kahres, Ken

This column is a weekly feature
written by Seminarians studying for the
priesthood for the Diocese of Savannah,
and is intended to convey the
viewpoints of men who wiH one day be
Shepherds of Souls, on a variety of
subjects.
LENT
Father Boland’s Lenten Pastoral of
1973 and the theme of the Department
of Christian Formation’s program, “The
Church, a Place to Grow,” will set the
tone for this column through the season
of Lent. Father Boland referred to the
need for “a strong and consistent
relationship” with the Lord, and indeed
such a relationship is basic to the
process of growing into a mature faith.
This process if a lifetime undertaking,
one which we can never say we have
completed. This is true because the
richness of a life of faith is indeed
inexhaustible and without bounds.
As future ordained ministers we are
even now together with God’s people
everywhere, ministers and witnesses to
his word in that “we attempt to live our
lives in the spirit of his love.” As we
prepare ourselves for the ordained
ministry of the Church, we strengthen
our commitment to the Lord’s Word
and our resolve to proclaim that Word
joyfully and invite others to grow with
us in the Lord.
In each of the next five weeks we will
consider one aspect of the ministry:
preaching, teaching, organizing,
celebrating, and caring. These do not

limit the exercise of the ministry, and
the exercise of these ministries is
certainly not limited to ordained
ministers. We hope that each person
who can find the time to relax with the
columns will see possibilities for his own
life of ministry to friends, family,
associates, and those whom he meets
during the week.

attend the Lenten programs of his
parish to do so and to share his ideas
with his brothers and sisters. We also
suggest that listening to the ideas of
others can be of tremendous value. We,
in fact, are always happy to hear from
you and to share your ideas with the
people of the diocese of Savannah. Our

This column will also present a
special feature in the spring. Two
seminarians will conduct in print a
debate on the question of amnesty, a
problem which has already occupied
some attention in the pages of the
SOUTHERN CROSS. Each will have
one column to present his view. The
third week each man’s rebuttal to the
other’s position will be published. We
hope that, after you have read the three
columns, you will want to let us have
your opinion, and we will devote
sufficient space in this place to publish
your views.
The seminarians of the Diocese of
Savannah join with us in wishing you a
holy and reflective season of Lent, one
filled with the Spirit and with love, a
time in which you can grow.

Services thanking them for the $2,000 sent from the Benefit Rock
