Symphony to Play
Original “Atlanta”
at April 1 Concert
A world premier presentation
of a six-part choreographic com
position, “Atlanta,” will be given
by the Atlanta Symphony Or
chestra at its closing concert for
this season April 1.
According to Don Gillis, mod
ern American composer especial
ly commissioned to write this
composition for the Atlanta Sym
phony Orchestra, “ ‘Atlanta’ is
a set of six impressions to which
the listener may supply his own
choreography for whatever his
imagination supplies in the way
of ballet.”
Atlantans will have much in
the way of background knowl
edge for their imaginations to
draw upon, for the six “sets”
composing the musical work are
titled: “Our Fair City,” a bro
chure; “Stone Mountain,” a spir
itual; ‘‘Piedmont Park,” a fairy
tale for children; “Plantation
Song,” a memoir: “Peachtree
Promenade”; and “City of At
lanta,” a march.

A postcard request comes from
Mrs. J. Seidenberg of Brooklyn,
which we think will interest oth
er readers of this column. She
has asked for suggestions for
using up dry pieces of dark rye
bread and pumpernickle, espec
ially as a substitute for the cus
tomary white bread stuffing for
poultry.
Dark Bread Dressing for Duck
■3Vv to 4 cups crumbs of dark
rye, pumpernickel or whole
wheat bread
1 egg
3 tablespoons melted schmaltz,
vegetable shortening or oil
1 large onion, diced fine
1 large tart apple, grated un
pared
6 to 8 prunes, cut free
1 teaspoon poultry seasoning
and/or 2 tablespoons minced
parsley
2 tablesp’ns dark brown sugar
14 cup soup stock, pineapple
,fuicc or orange juice
To make the crumbs, dry out
cut leftover bits of bread by
placing it in a shallow pan in a
moderate oven for 10 minutes.
When dry and crisp, but not
burned at the edges, place in a
paper bag and use the rolling pin
to crush into fine crumbs by
rolling. Add the egg and stir
well. Melt shortening in a fry
ing pan, add diced onion and
saute till light brown. Add the
egg-coated crumbs, grated apple
and cut prunes and stir over
moderate heat for 2 to 3 min
utes. Add remaining ingredients,
stir well and remove from heat.
Use as stuffing in the customary
way as soon as cool. This amount
is sufficient for an average size
duck or chicken. Double the
amount for a goose or medium
size turkey.
Variation: Instead of stuffing
this mixture into the cavity, form
into balls the size of a large ap
ple and place around the poultry
to be roasted. The balls of dres
sing have one advantage — they
roast or bake with a rich brown
crust and taste like more.
