Denies Bias

ities denied this week that anti-
Semitism played any part in the
denial of dormitory facilities to
30 girls who were graduated
from a high school in a section
of Baltimore which has a large
Jewish population. (No other
Maryland high school graduates
received such notices, the Asso
ciated Press reported.)
University officials claimed
that a housing shortage existed
and insisted that there was no
thought of religious discrimina
tion. It was pointed out that the
university receives four times as
many freshman applications
from the high school in question
than from any other school in
the state. Dr. H. C. Byrd, Uni
versity president, said that hous
ing was assigned on a “geograp
hical basis” but that “somebody’s
got to be trusted to use arbitra
ry judgment.”

as the palate. Remember that
vegetables are an essential item
in the diet at all times, especial
ly with heavier meals.
Use plenty of the various
squashes that come to our
markets these days, from the
chini to the acorn and Hubbard
varieties. Plain boil or sliced zuc
chini with just enough water to
prevent sticking, add salt or
onion salt and butter or substi
tute, and serve with a generous
sprinkling of grated Cheddar
type cheese, farmer cheese or
buttered cracker crumbs. A dash
of paprika for accent makes
this a most pleasing vegetable to
serve with boiled, broiled, fried
or sweet-sour fish.
Acorn squashes should be cut
jn half from stem to blossom
end, seeds removed, boiled in
lightly salted water till tender
enough to pierce with a tooth
pick, then drained and the cen
ters filled with cooked carrots,
peas, cut green beans, diced
beets or tiny meat balls. Baking
the filled squash halves 15 min
utes at 375° F. before serving
adds glamour to any meal.
The larger, hard - skinned
squashes can be cut into sections
convenient for handling, the
shell cut away and the meat
diced or sliced. Cover with cold
water, add salt, a dash of onion
juice if desired for a fish or
meat meal, or a dash of cinna
mon or nutmeg if used with
poultry, and cook in a covered
pot 10 or 15 minutes or ’til
tender enough to mash. Served
plain or mashed, drizzled with
melted shortening, it brightens
up any meal.

TORTE
1 cup butter
1 cup sugar
3 eggs, separated
Vt pound blanched almonds,
ground fine
3 tablespoons bitter almods,
blanched and ground fine
1 tablespoon grated lemon rind
2 tablespoon lemon juice
2 cups all purpose flour,
sifted three times
1 wine glass rum
1’6-oz. glass red raspberry
preserves
1 6-oz. glass currant jam or
jelly.
Cream butter and sugar till
very smooth. Add egg yolks one
at a time while creaming well,
then add the finely ground al
monds and bitter almonds. Dried
peach or prune pits may be sub-

in the lemon rind and juice then
add the sifted flour a little at a
time ’til thoroughly combined and
smooth. Fold in the beaten
whites. Line the bottom and
sides of a greased spring form
baking pan, bringing the mix
ture up the sides for about an
inch, reserving about Vi cupful
of the dough for strips. Spread
the mixed raspberry and currant
jam over top as evenly as pos
sible. Sprinkle generously with
rum. Form thin rolls of the re
served dough and place in lattice
formation across top. Bake 35
to 40 minutes at 350° F. or ’til
lightly browned at edges and on
top. Variations can be made by
baking this Torte in a square pan
lined with heavy wax paper and
using strawberry jam mixed
with finely chopped almonds.
Place the strips criss-cross, and
when cutting into VA inch
squares, see that each piece is
topped with some of the strips.
