STUFFED PICKLED GREEN
PEPPERS
20 ripe green peppers
1 small head of white cabbage
2 medium size onions
1 teaspoon celery seed
1 teaspoon dry mustard
Cider vinegar to cover, with
V* cup brown sugar
Cut the green peppers across
the tops about % inch below stem
and remove seeds. Wash and
drain, then cover with cold wa-

ing on ripeness of peppers. The
thicker, slightly underripe kind
require more salt. Let stand ov
ernight, drain the peppers and
tops well while preparing the fil
ing. Chop the cabbage and on
ions in a large wooden bowl and
add celery seed and dry mustard.
Fill the peppers and adjust tops,
tying well with string. Place the
peppers in a stoneware pickling
crock and add the vinegar and
brown sugar which has been
brought to a quick boil. Cover the
crock and let stand in a cool
place. These pickled peppers,
sometimes called Mangoes, should
be ready to serve in six weeks.
VARIATION; Add 2 cups fine
ly chopped celery leaves included,
to the filling mixture, and 1 ta
blespoon of mixed whole spices
to the vinegar for special flavor.

24 small cucumbers (S to 4 inch
size)
S medium size onions
V* cup salt
H cup olive oil
4 cups vinegar
1 cup mustard seed
1 tablespoon celery seed

Wash and slice cucumbers very
thin. Sprinkle with salt and let
stand 3 hours in a crock or large
bowl. Peel the onions about 15
minutes before time to rinse and
drain the sliced cucumbers. Slice
the onions. Combine oil and vin
egar by shaking in a tightly clos
ed glass jar. Add the sliced on
ions to the vinegar mixture.
Combine this with the sliced cu
cumbers, add the mustard and
celery seeds, stir lightly and turn
into sterilized jars, filling to the
top. Cover the seal. Use after 2
or 3 weeks. Yields 8 pints or
more.
MARINATED P.RISKET
POTROAST
4 lbs. first cut brisket of beef
2 cloves garlic
1 lemon or 2 tablespoons juice
2 large onions, sliced or diced
1 carrot, diced
2 stalks celei'y, cut fine (leaves
included)
1 cup cold water
1 teaspoon Atilt
% teaspoon white peppWr,
optional
V* teaspoon paprika
Vt cup ketchup
After preparing the meat for
cooking, rub meat with cut cloves
of garlic on all sides. Sprinkle
with juice of lemon. Add garlic
and tie meat together in foldover
or rolled up fashion. Place in a
large covered bowl in the refrig
erator for 4 to 5 days. Sear the
meat in a heavy pot or Dutch
Oven till lightly browned on all
sides. Add onion, carrot, celery,
water and seasonings and cook
over low heat, tightly covered,
allowing 30 minutes per pound.
Taste and add seasonings, if de
sired. Add ketchup and cook un
covered, spooning some of the
sauce over the top of the meat
and turning once or twice during
the next 45 minutes. There
should be sufficient gravy to pre
vent sticking or scorching. Let
cool in the gravy before slicing
the meat and reheating when
ready to serve. Strain gravy and
serve separately.

Atlanta Council Attacks
Bias in Political Campaigns
The Atlanta Jewish Communi
ty Council, at its Delegates As
sembly in October, recorded ap
proval of fair practices in poli
tical campaigns.
The Council voted unanimous
ly to join the many other organ
izations in Georgia in “calling
on political leaders and candi
dates for public office in the
State of Georgia to see that our
political campaigns are free from
appeals to racial or religious
prejudices. We urge the news
paper editors and publishers of
Georgia to decline any political
advertisement which makes such
an appeal to intolerance. We ask
the managers of radio and tele
vision stations of Georgia to do
everything within their power to
discourage any such violation of
the basic principles of this State
and this Nation.”
The same session also went on
record urging that the Council’s
constituent organizations in turn
urge the component memberships
to vote in the forthcoming elec
tion, pointing up .the importance
of “one vote” in elections.
