Here is a zippy dish your fam
ily will welcome at any time: It
is well to start with somethin#
zippy like Herring Salad, made
as follows:
HERRUNG SALAD
(Gehackte Herring)
1 large herring, soaked, fillet
ed ’
2 hard cooked eggs
1 tart apple
1 small onion, optional
2 tablespoons lemon juice or
3 tablespoons vinegar
IN LESS THAN 4 MINUTES
PROM PACKAGE TO PAN!

2 tablespoons brown sugar
2 tablespoons salad oil
3 tablespoons dry broad or
cracker crumbs
A dash of white pepper
Minced parsley or fresh dill
Chop the filleted herring and
eggs to a smooth pulp. Grate the
apple and onion (if used) and
add. Combine lemon juice or
vinegar, sugar and oil. Taste and
add sugar if desired. Stir in
crumbs, add pepper and fresh
greens and combine with the oth
er miiture. Cover and chill 1/2
hour before using, or prepare
the previous day and store in a
well covered glass container.
Serve on lettuce, in tomato cups
or spread on crackers or bread
rounds.

PRUNE & BREAD DRESSING
FOR POULTRY
(Deliciously Different)
6 to 8 slices whole wheat
bread, diced
4 tablespoons schmaltz or
shortening
1 large onion, finely diced
8 eggs
5 tablespoons, sugar, (brown
preferably)
1/2 teaspoon salt
1 teaspoon grated lemon or
orange rind
3 tablespoons orange juice or
prune liquid
12 to U large prunes, pitted
after soaking overnight
Place the bread cubes on a
shallow pan and brown under the
open broiler flame, turning till
lightly browned on all sides. Or

shelf of the oven. Heat the
schmaltz or other shortening in
a heavy frying pan and add the
diced onion, stirring frequently
till light yellow and transparent.
Add the browned bread bits and
stir gently for 1 or 2 minutes.
Beat eggs with a rotary beater
till creamy, add sugar, salt, grat
ed fruit rind and juice. Stir into
the browned bread cubes. Cook
over moderate heat, stirring
frequently till the egg mixture
has been absorbed. Let cool be
fore adding the prepared prunes.
Stir the mixture lightly before
stuffing into the cavity of a
chicken or turkey. The prunes
need not be stewed. Covering
them with boiled water and let
ting stand in the refrigerator
overnight will puff them suffi
ciently so that the pits can be
removed with the point of a par
ing knife. Sufficient for a 5 to
6 pound roasting chicken or tur
key.

BIG TOP DESSERT
(A Frozen Treat)
2 cups canned cranberry satice
1 cup grapefruit juice
1/2 cup canned apricot nectar
or fruit syrup
l/It teaspoon almond extract
8 canned, or fresh peach halves
8 maraschino cherries, red or
green
Fresh mint for garnish
Combine the canned cranberry
sauce, fruit juices and flavoring.
Turn into the refrigerator ice
cube tray. Turn controls to cold
est setting and freeze the mix
ture to a heavy mush consisten
cy. If time permits, remove to a
chilled bowl and beat well with a
rotary beater for 1 minute. Re
turn to freeze till solid or at
least of a consistency to mold
with a heavy spoon when filling
sherbet cups. Top each serving
with a peach halve inverted, and
place a cherry on top. A few mint
leaves add that irresistible touch.

And here’s an old favorite rel
ish that goes well with holiday
food:
GINGERCRANBERRY
RELISH
1 can whole cranberry sauce
or 1 1/2 cups steived fresh
cranberries, sweetened
1/2 cup seeded raisins
2 whole seedless oranges, put
through food chopper
3/It teaspoon ground ginger
Combine the ingredients listed
by mixing with a silver fork to
prevent discoloration. Chill in a
covered glass container over
night or at least 4 hours before
serving.

friend and neighbor, has sent us
her recipe for a very light and
spongey spongecake. It really has
a distinctive flavor and texture,
and we are very grateful to her,
as you will be when you try it.
It’s so easy to mix and bake, too.
QUICK-EASY SPONGE
CAKE
6 eggs, separated
11/2 cups sugar
11/2 cups flour, sifted twice
with 1 teaspoon baking pow
der
1/2 cup orange juice (fresh or
canned)
Comb'ne these ingredients at
room temperature for best re
sults. beat etrer whites with 3/4
cup of sugar till thick and crea
my. Peat the egg yolks with re
mainder of pugar till light yel
low and smooth. Add orange
juice to beaten yolks then stir in
the flour that has been sifted
with the baking powder. Fold in
the egg whites and turn into a
spring form pan, preferably the
well type. No need to grease the
cake pan. Bake in a pre-heated
oven 1 hour at 350 deg. F. Let
the cake cool in the pan, inverted
over a heavy bottle neck or rest
ed between two inverted pans of
equal height, separated to per
mit the circulation of air under
the cake. Serve this feather-light
cake without benefit of frosting,
too.
