Farmer Cheese

Carrot Cream Pudding
12 carrots, medium size
4 tablespoons sugar

1 cup Matzo Meal
2 tablespoons butter

1 cup Matzo Meal
H cup ground almonds or
walnuts (ground very fine)
1 tablespoon ground ginger.
Stir honey and sugar together in
a deep saucepan and bring to a
quick boil. Cook over moderate
heat 10 minutes or till it is a gol
den colored syrup. Remove from
heat. Comhine the other listed in
gredients with a fork and dump
into the syrup all at once, stirring
well. Place over moderate heat
not dry, then fold in the sugar
while beating till it holds a peak.
Fold in the egg yolks. Heat the
honey and shortening in a baking
pan measuring 12x8x2 inches.
While the oven is being heated to
325 deg. F., and as soon as the
honey and fat is dissolved, place
two of the soaked Matzo in side by
side. Spread with preserves, using
1 cupful. Top with two more Mat
zo that have been soaked in juice
and spread these with grated ap
ple mixed with ground almonds.

1 pound Farmer Cheese
3 eggs, separated
Mi pound sweet butter
1 teaspoon salt
1 teaspoon sugar

Mash the cheese well with :
fork in a mixing bowl. Beat eg
yolks and stir in thoroughly. Melt
the butter in pudding dish or shal
low casserole while preheating in
to cheeso mixture. Stir well. Beat
egg whites with salt till stiff
enough to hold a peak. Fold in
sugar and cinnamon and then
work in with an over and over
motion of mixing spoon till com
bined with the cheese mixture.
Turn into the buttered pudding
dish or casserole and bake 30 min
utes at 325 deg. F. or till lightly
browned. Serve hot. Serves 4.

Matzo Fruit Layers
1 cup undiluted orange juice
10 Matzos
4 eggs, separated
Vz teaspoon salt
14 cup sugar
14 cup honey
4 tablespoons shortening
(schmaltz or vegetable)
14 cups preserves (strawberry,
raspberry, etc.)
2 cups grated tart apple, tightly
packed
% cup finely ground almonds
% cup Matzo Meal mixed with
% cup sugar and 2 tablespoons
cinnamon
V\ cup brandy.
Pour the fruit juice into a large
shallow pan and soak the Matzo
two at a time for 5 minutes. Do
not soak too long or the Matzo will
become too limp to handle. Beat
egg whites with salt till stiff but
ing preserves. Top Tyith two soak
ed Matzo, spread with grated ap
ple and nuts and sprinkle with
Matzo Meal, sugar and cinnamon
mixture. Top with remaining pair
of soaked Matzo and spread the
beaten egg mixture over all. Bake
30 minutes at 325 deg. F. Cut
while warm in the pan, using a
sharp thin bladed knife. Cut into
squares or oblongs as desired,
and sprinkle with brandy. Lift
each cut with a spatula when rea
dy to serve. Yields 18 two-inch
squares or 12 2x3 inch cuts.
