Beet colored horseradish.
Chicken Soup with fluffy Kna-
idlach.
Roast Chicken with Matzo-Prune
dressing, giblet gravy.
Asparagus tips.
Grapefruit and orange salad.
Almond - Cocoanut Maroons,
sponge cake or Matzo-fruit layers.
Tea with lemon

Hat-Free Matzo Knaidlach
(Basic Recipe)
6 tablespoons Matzo Meal
4 tablespoons boiling water
Vfc teaspoon salt
1 egg, separated
4 cups boiling water
1 teaspoon salt
Place the Matzo Meal in a mix
ing bowl and add the 4 tables
poons boiling water, stirring till
moistened. Beat the egg white with
salt till stiff but not dry. Add
the yolk to the Matzo Meal mix
ture which has cooked while beat
ing egg white. Stir well. Fold in
the beaten egg white and let stand

ing water. Cover after dropping
in the last ball and cook 10 to 12
minutes. They will be puffed to

Beat eggs, stir in schmaltz and
Matzo Meal, adding a little water
at a time to form a stiff batter.
Add the salt and other seasoning
and stir well. Chill an hour before
forming into small balls. Drop
balls into boiling salted water.
Cook covered 30 minutes. Drain.

and bake 40 to 45 minutes at 375 |
deg. F. or till nicely browned and
crispy crusted. Brush tops with,
cold wator for a harder crust, if
desired. Cut when cold for sand
wich filling. Yields 12 medium siz
ed rolls.
Variation: For sweetness ice
rolls, add Y\ cup chopped raisins
or other dried fruit and increase
the sugar to V4 cup. Flavor with 1
tablespoon lemon or orange juice
and' 1 teaspoon grated fruit rind
(lemon or orange). Drop the bat
ter into small well greased muffin
pans and bake 30 minutes at 350
deg. F. or till nicely browned.
Spread tops with Passover Choco
late Spread, if desired, while still
warm.
Passover Almond Macaroons
3 egg whites
1 pound blanched^and ground
almonds
4 tablespoons Matzo Cake Meal
4 cups powdered sugar, uppx.
Grated rinds of 2 lemons.
Beat egg hites stiff. Fold in list
ed ingredients in the order named

foil. Be sure to leave about one
inch space each way between the
macaroons. Bake 15 minutes at
300 deg. F. then increase heat to
350 deg. F. and bake 15 minutes,
longer or till nicely browned. Letj
cool before removing from the pan
and peeling off paper or foil.
Yields 36, approximately. j
Variation: Substitute finely
ground walnuts for the almonds, j

but they are very good.
