OKRENT RESIGNS
CHATTANOOGA—Herman La-
bovitz, president, has announced
the resignation of Bill Okrent as
director of the Jewish Community
Center here.
Mr. Okrent joined the staff in
1948 and in 1949 succeeded Louis
Goldstein as executive director.

Mother's Food
To Honor Four
On Mom's Day
Four American mothers who
combine family life with activities
which have brought them public
recognition will be honored for
Mother's Day, May 10, with
awards established by Mother’s
Food Products, Inc., and given by
Harry Hershfield on his televi
sion program over Station WABC-
TV, Channel 7, on Monday, May
4, from 19:30 to 11 p.m.
The award winners, drawn from
different religious faiths, will ap
pear on the show as Mr. Hersh-
field’s guests. The Mother’s Day
Awards provided by Mother’s
Food Products, Inc., will be the
first of their kind given by the
noted raconteur and master-of-
ceremonics, and the only Mother’s
Day citations from a firm in the
food industry.
Battle of Mandel Bread
Dear Editor:
I’m sending you a sample of
the Mandel Bread. Hope you en
joy it.
Now, I have a correction to add
to the recipe. If using an electric
mixer, more than three cups of
flour are needed. I used almost

Here’s something you will want
to serve for luncheon one of these
fine spring days: .
Spinach and Spaghetti Casserole
2 cups cooked spinach, drained
well and chopped
6 cups cooked spaghetti (1 Vi lb.
pkg.)
3 hard cooked eggs, chopped
1 cup grat’d Cheddar type cheese
3 tablespoons dry bread crumbs
Vi teaspoon paprika
2 cups medium white sauce
4 tablespoons grated cheese for
topping
Be sure the cooked spinach is
well drained before and after
chopping with knives or spoons.
The spaghetti should be drained
well after cooking till tender in
salted water as per instructions on
package. Place a layer of spaghet
ti in a well buttered casserole or
baking dish. Add a layer of chop
ped spinach, then a layer of spag
hetti till the casserole is filled %
full. Combine the chopped eggs,
grated cheese, bread crumbs, pap
rika and press some into four or
five places down to the bottom of
the spaghetti and spinach. Add the
white sauce in the same way, leav
ing some to spread over the top.
Sprinkle with grated cheese and
bake 15 to 20 minutes at 375 deg.

melted. Serves 6. <
t Variation: Add 1 diced onion,
browned in butter or substitute, to
the chopped spinach.
Variation 2: Substitute chopped
cooked broccoli for spinach in Ba
sic Recipe or Variation.
Chestnut Dessert
(French Mont Blanc)
1 Vi pounds chestnuts
3 cups milk, scalded,
% cup sugar •
Vs cup water
1 \<i tablespoon butter ,
1 ts cups heavy cream- whipped
4 tablespoons confectioners’
sugar
2 tablespoons rum, liquor or
sherry
Cut a gash or two in the flat side
of each chestnut and cover with
cold water, boil 15 minutes, drain
| and cover with cold water to cool.
Peel off the shells and remove
brown peel which should come off
easily. Scald the milk in top of a
double boiler and drop in each
chestnut as soon as peeled. Cover
over boiling water 30 minutes or
until the chestnuts are tender.
Drain. The milk can be used later
in puddings or sauces. Cook sugar
and water until a few drops in cold
water forms a soft ball, or to 236
deg. F. by candy thermometer.
Add butter to the syrup, stirring
lightly, and keep over hot water.
Put the boiled chestnuts through a
sieve placed over a mixing bowl
and blend in the syrup as soon ;js
slightly cooled. Rub the mixture
through the sieve, spooning it
lightly into a buttered 9-inch ring
mold. With a spoon press lightly
until even with the edge of mold,
adding whatever bits fall over
board. Turn out on a serving plate
by placing the plate over the filled
mold and inverting deftly, hold
ing plate and mold together. Lift
off mold and pile the whipped
cream, which has been sweetened
and flavored into the well and up
to a peak inside the ring. If de

The Mandel Bread sample ar
rived in excellent shape and state
of freshness. Good too—to the
last crumb. So was Mrs. Schwartz-
man’s. All of which goes to prove
that the cook’s most often the
thing—and not the recipe. That’s
just the guide. As most good cooks
eventually find out, such things as
temperature, size of eggs, type of
mixers, length of mixing and oth
er factors can call for extemporiz
ing such as Mrs. Kramer so cap
ably performed. My late grand
mother, a pioneer in Albany, never
heard of a recipe. She was strictly
“rule of the thumb” and some de
licious cooking emerged from her
kitchen. I can attest that none of
her children or grandchildren was
ever underweight. And as long as
our kind readers suck as Mrs.
Kramer send us samples of cook
ies, we're not apt to join that cate
gory even now.
