MOTHER'S DAY has become an
American tradition. It is our trib
ute to MOTHERS-—past, present
and future, that we have set aside
one day in May in honor of all
mothers everywhere, from the
“MOTHERS in ISRAEL" of Bib
lical times to the MOTHERS IN
ISRAEL of the present day.
There are various ways of show
ing our appreciation of MOTHER
—all the way from lavish gifts for
her personal use to a holiday from
the kitchen. If it isn’t practical to
take mother out for luncheon or
dinner on MOTHER’S DAY, then

let Father and the youngsters plan
and prepare the meals for a
change. How about starting the
day with a special breakfast dish?
Here’s our suggestion:
Doubly Good Scrambled Eggs
(serving 4)
1 tablespoon butter or substitute
6 eggs
'.2 teaspoon salt
cup milk
% cup dry cottage cheese for
Farmer Cheese)
Place butter on a heavy frying
pan over moderate heat while
beating eggs and salt with a rotary
beater. Stir in the milk and cheese,
breaking particles of cheese while
stirring or beating. Pour mixture
into the melted butter in pan and
cook till the cheese is warm, about
3 minutes over low heat. The mix
ture should begin to thicken before
stirring with a fork as lightly as
possible till the mass is broken and
cooked through. Have toast points
ready, buttered or plain. Arrange
the scrambled eggs in center of
warmed platter and place toast
points around or into the eggs in
any desired formation. Garnish
with minced parsley or sprinkle
with paprika and serve hot. Serves
four.
Strawberry Cream Puff Pie 1
Pie Mixture:
Vi cup boiling water
V4 cup butter or substitute
Vi cup sifted flour
Vs teaspoon salt
2 eggs -
Bring the water to' a boil in a
heavy saucepan and add the shor
tening, stirring till melted while
continuing to cook. Combine flour
and salt and drop it all at once into
the hot mixture, stirring, constant
ly till the combination forrp^ a
compact mass and leaves the sides
of saucepan. Remove from heat
and let cool slightly. Add eggs one
at a time, beating well after each
addition till the mixture is smooth.
Spread this pastry evenly in a but
tered 9-inch glass pie plate, oven
proof, and bake at 375 deg. F. until
firm and puffed, approximately 20
minutes. Do not spread this pas
try up sides of baking dish for
more even top. Let it cool away
from drafts while preparing the
filling as follows:
Filling:
M> cup sugar
Vb teaspoon salt
2 tablespoons cornstarch
1 tablespoon flour
2 cups milk, heated
1 egg yolk, beaten slightly
Mi cup heavy cream, whipped
1 teaspoon vanilla
2 cups sliced strawberries
Combine sugar, salt, cornstarch
and flour in the top of double boil
er. Stir in the heated milk till
smooth, a little at a time, please.
Place over boiling water in bottom
of boiler and cook till thickened,
stirring the mixture constantly for
a creamy, free-from-lumpg result.
Cooking time for this is about 12
tot 15 minutes. Stir in a few table-
spoonsfuls of this mixture in the
egg yolk in bowl or cup then re
turn the combination to mixture
in top of double boiler, stirring till
thoroughly smooth and creamy,
keeping it over boiling water dur
ing the process. Remove from hot
water and cool before chilling it
in the refrigerator for one hour.
Fold in the whipped cream, vanil
la and a few slices of strawber
ries. With a knife slit the baked
puffed pastry through center, lift
ing off top carefully. Turn in the
filling and replace top as for
cream puffs. Spread the sliced
berries over top just tyjfore serv
ing. Cut into wedges and serve,
from the glass baking plate. Serves
6 to 8.
