Our charming, sweet-smelling

he and his wife,

mother, live in
a hole at the

the main support of the Suucah.
Hoppalong is called Hoppeleh
for short by my bov^, for like all
Sabras, they change all names of
friends into homely Yiddish di
minutives. Hoppeleh adopted us
from the first evening we moved
in. About eight o’clock that even
ing I found him trying to look in
visible behind the open door. I
thought he got in by mistake, so
I picked him up and put him out
side. Without a moment’s hesita
tion he turned and hopped in
again, this time quickly disappear
ing under a book case.

enough, my husband could never

ten moved about the room when
I was there.
Of course the children went
mad with excitement, and did no
thing else but invent stories about
Hoppeleh’s doings. My small boy
decided that the animals living in
our \yood and heard, someone
called "David was coming to live
there, and they mistook him for
King David.
One night I came home at 9:30,
and there was Hoppeleh sitting
patiently in front of the closed
door, like a dog, waiting for me
to come and let him in. When I
opened the door, he hopped in, as
though of right, and disappeared.

recipe will be sufficient for a doz
en and a half sweet rolls, a loaf
of fruited bread, a fruit-filled tea
ring or one dozen and a half
“schnecken” (sweet cinamon roll
ups). When ready to bake, bring
out the chilled dough and lot stand
at room temperature for 15 min
utes while preparing the oven and
kneading the board. Knead and
shape as desired.

and nut filled tea ring for that fes
tive touch. Here's how to make the
dough that can be kept in the re
frigerator for a whole week, and
used as required:
Refrigerator Yeast Dough,
Basic Recipe
3 tablespoons sugar
4 tablespoons vegetable shorten
ing or salad oil
U4 teaspoons salt
Zi cup lukewarm water
1 package dry or compressed
yeast
Zt cup scalded and cooled milk
1 egg
3Zi cups sifted all purpose flour
1 teaspoon vanilla or V4 tea
spoon almond extract
Cream sugar, shortening and
salt in the bottom of your mixing
bowl. Dissolve the yeast in luke
warm water and stir into the
creamed mixture alternately with
half of the sifted flour to make a
soft batter. Combine slightly beat
en egg with, lukewarm milk and
stir in alternately with remaining
sifted flour. Add the flavoring
last, a few drops at a time while
mixing till smooth. The mixture
should be firm enough to punch
down with the fists but not too
thick and weighty. Brush the top
with a little melted shortening or
oil, cover with wax paper and
3 tablespoons dry cocoa
11/3 cups confectioners’ sugar
Zs teaspoon vanilla
Combine hot coffee and cocoa,
stirring till smooth. Stir in the
confectioners’ sugar a little at a
time till smooth then add the fla
voring and stir lightly. When of
spreadable consistency, spread on
one layer of the cake and top with
the second layer. Dust top with
confectioners’ sugar or use some
of the filling for a thin frosting
and sprinkle with chocolate shot.

Two-Layer Nut Cake
4 eggs, separated
A pinch of salt
Zi cup sugar
Zi pound ground nuts (almond,
walnut or hazel nuts)
1 teaspoon vanilla
2 tablespoons fine cracker
crumbs
2 tablespoons strong black
coffee, cold or iced
Beat yolks with salt till creamy
and lemon colored then add the
sugar a spoonful at a time while
continuing beating till thick and
free from sugar grains. Add the
ground nuts, flavoring and
crumbs and stir till combined
Beat egg whites stiff but not dry
and fold into the first mixture as
lightly as possible. Turn into two
greased and paper-lined 9-inch
round cake pans, 'preferably the
removable bottom kind, and bake
35 to 40 minutes at 350 deg. F. or
till the cake springs back when
touched lightly with the forefin
ger. Turn out on wire rack to cool.
Sprinkle lightly with the strong
coffee and fill with the following
filling:

3 tablespoons extra strong hot
coffee

A few evenings later I came home
at 11:30, and there was Hoppeleh
waiting again. He wasn’t sitting
humbly waiting in front of the
door, like before, but was sitting
sulking in the corner, as if furious
with me for having kept him up so
long past his bed time. When I
opened the door, he flounced past
me in the most insulting manner.
The children used to sneak him
into their room at night. They’re
so cunning at concealing things
from me. They may have taken
him to bed with them, for all I
know: The only way I could put a
stop to it was by telling them that
Hoppeleh’s wife would be annoyed
with him if he spent too many
nights away from home.
Jonathan . 8Vi> now - spends a
lot of time listening to the radio
these days. He always manages
to get Syria, because our Arab
neighbours and their relation to
us seem to fascinate him. “Imag
ine how clever they are,” he told
me. “They sit there on the borders
of Israel, and they know what’s
going on hi an ulpan in Tel Aviv.”
The other night we were coming
home after nightfall. As we walk
ed along Jonathan kept looking at
the sky, which was covered with
stars. ✓
“Are the stars countries?” he
asked.
“I don’t think so”, I told him.
“What a pity” he said. “It would
be so nice to see some countries j
that are at peace with us.”
