FOODS TO REMEMBER
Dear Boys and Girls:
A few weeks ago, a very great
scholar was taken from us. While
he is now among the dead, his
memory will live because of the
great books he wrote and es
pecially for his monumental
“Legends of the Jews,” I refer to
Prof. Louis Ginzberg.
Many interesting Jewish leg
ends are told in these volumes,
and 1 am going to treat you to
one of them. Here is the legend
about 1he unity of the Ten Com
mandments, the great ethical
and moral laws of the Jews which
have been accepted by all peoples
throughout the world*
The Ten Commandments which
pod first revealed on .Mount Sinai
eorrespend in their character to
the ten words which He had made
use of at the creation of the world.
The first commandment, "I am
the Loid, thy God,” corresponds
to the first word at the creation,
“Let there be light,” for God is
the eternal light.
The second commandment,
“Thou shall have no other god be
fore Me.” corresponds to the sec
ond word, “Let there be a firma
ment in the midst of the waters,
and let it divide the waters from
the waters.”
The third commandment
“Thou shalt not take the name of
thy God in vain," corresponds to
the word, “Let the waters be
gathered together” for as little as
water can be gathered In a crack
ed vessel, so can a man keep his
possessions which he has obtained

The fourth commandment, “Re
member the Sabbath day to keep
it holy,” is related to the word,
"I,et the earth bring forth grass,”
for he who truly observes the
Sabbath will receive good things
from God without having to labor
for them, just as the earth pro
duces grass that need not be sown.
The fifth commandment, "Hon
or thy father and thy mother,"
corresponds to the word, “Let
there be lights in the firmanent
of the heaven,” for God said to
man, "I gave thee two lights, thy
father and thy mother, treat them
with care.”
The sixth commandment, “Thou
shall not kill,” corresponds to the j
word, "Let the waters bring forth
abundant by the moving creature,” j
for God said, "Be not like the fish,
among whom the great swallow j
the small.”
The seventh commandment,
“Thou shalt not commit adultery,”
refers to the word, "Let the earth
bring forth the living creature
after his kind,” for God said, "I
gave thee a wife, honor her.”
The eighth commandment,
“Thou shalt not steal,” corre
sponds to the word, "Behold 1
have given you every herb-bearing
seed,” for none, said God, shall
touch his neighbor’s goods.
The ninth commandment,
"Thou shalt not bear fatse witness
against thy neighbor,” corresponds
to the word, “Let us make man in
our image,” because man is made
in God's image he dare not bear
false witness against his neighbor.
The tenth commandment, “Thou
shalt not covet they neighbor’s
wife,” corresponds to the tenth
word of the creation, "I created
a woman for man, let each man
keep his own wife, and let not
only man covet another’s wife.”
The Ten Commandments are so
closely interwoven that the break
ing of one leads to the breaking
of another. A faithful observance
of them all leads to happiness for
all.
Butcher Says Meat
Noil-Kosher; Sues
MIAMI, Fla., (JTA)—A butcher
who was convicted in a Miami
Beach court last month of selling
non-kosher meat as kosher,
brought suit this week for $75,000
damages In Circuit Court against
the packing firm which delivered
the meat to his market.
The butcher, Samuel Braslaw-
sky, said the packer delivered
meat to his shop and five minutes
later, a Miami Beach city inspector
arrested him for selling non-
| kosher meat before he had a
chance to inspect the shipment.
The butcher, who had ordered four
kosher lambs, was said to have re-
i ceived three kosher and one noai-
kosher carcasses.

Many requsts have come to me
from too many readers to list
in this column, requesting some
practical ways of utilizing left
overs of cooked rice, mashed pota
toes, cornmeal mush (Mamaliga,
in other words). Some of these
letters are from newly marrieds,
some from older homo-makers-
on-a-budget. All stress the neces
sity for being practical, economi
cal. Most of them do not have deep
freeze cabinets or compartments
in their electric refrigerators.
This matter does demand im
mediate attention. So, here are j
a few suggestions to help the bud- !
get as well as the culinary ima- '
gination.
Economy Measures with Mashed
potato
Potato Knishes:
1 cup leftover mashed potato
1 egg
1/2 cup sifted all-purpose flour
Combine well in a mixing bowl. :
The mixture should be firm I
enough to form into balls the size
of apples, medium size. Flatten j
each ball of dough in the palm
of the hand and tuck a tablespoon ,
of either of the following fillings j
into the center of each in turn, i

time. Flatten slightly and fry or
bake till lightly browned.
Filling No. 1: Chopped leftover
meat of any kind, seasoned to
taste with salt and pepper or
paprika and moistened with egg
yolk or a little soup stock. May
be thickened if necessary with
fine cracker crumbs or Matzo
meal. Minced celery or parsley
adds flavor.
Filling No. 2: 1/2 cup cooked
Buckwheat Groats (KASHA)
1 small onion, diced and brown
ed in shortening
1 tablespoon cracker crumbs
1 egg yolk or white
Combined well.
Leftover Rice Suggestion 1:
1 cup cooked rice
1/4 cup seeded raisins, cut fine
or chopped
1 tablespoon honey or sugar
1 1/2 cups milk
A dash of cinnamon or nutmeg
1 tablespoon butter or substi
tute
Combine in the order listed and
heat in top of double boiler over
boiling water. Serve as a luncheon
dessert or main dish for children
or their elders. Serves 3 or 4, de
pending on portion.
Leftover Rice Suggestion 2: Add
1 finely diced onion browned
lightly in 2 tablespoons vege
table shortening or oil to the
cold leftover rice. Heat 1 cup
condensed tomato soup (can
ned), or diluted tomato paste in
hot water to make the same
amount, and stir into the rice
and onion mixture. Add salt,
pepper or paprika to taste. Turn
into a baking dish or casserole
and top with grated or shredded
Cheddar Type Cheese to which
a little cracker or dry bread
crumbs has been added. Slip un
der the broiler flame for 3
minutes to melt the cheese top
ping and heat through. Serve
hot.
Leftover Mamaliga (cornmeal
mush) should be packed into a
buttered or (schmaltz) greased
square baking dish with the
back of a spoon. Cut into 1-inch
squares or 2x1-inch pieces. Add
these to one well beaten egg in
a mixing bowl then lift^out and
sprinkle or roll in flour.. Fry n
hot melted fat of your choice
till nicely browned on both sides.
Excellent with any main dish
for luncheon or dinner. Or serve
with hot milk and a little sprin
kling of cinnamon and sugar for
the youngsters’ lunch or with
soup.
More Tips on Leftovers
Chicken Salad: Can be made with
1 cup diced or finely cut leftover
chicken cut from legs or breast
by adding Vs cup each diced
celery and tart apple. Combine
with 2 tablespoons mayonaise or
thick salad dressing and serve
on lettuce or other salad greens
for luncheon. Adding sliced or
diced hard-cooked eggs adds re
quired nutritional value as well
as eye-appeal. Serves 4.
Leftover cooked lima beans, navy
beans, lentils or chick peas Can
be mashed or put through the
potato ricer, diluted with hot
tomato juice and flavored with
fried onion and/or diced salami
or other sausage to make a wel
come soup for any cold day
