taste and aftermath. Serve cool
ing drinks as well as chilled fruit
or vegetable soups — Borschts, in
other words. And don’t forget
the crisp and colorful salads!
For added proteins, use sliced
hard-cooked eggs in salads and/or
cold cuts of all kinds. Add diced
as garnishes for cold fish dishes,
hard-cooked eggs to spinach, sor
rel greens or beet Borscht! Fill
green bell peppers (cut in halves
lengthwise), scooped out tomatoes
or cucumber boats (cucumbers,
unpared, cut lengthwise and seed
portion removed with a teaspoon)
with egg salad. Top with sour-
cream or mayonnaise just before
serving time.
If your family demands meat
dishes on hot days, make use of
your electric broiler (if you own
such a handy bit of equipment),
or make a charcoal brazier out of
an old tin pan covered with a
broiler rack. Broil spring chick
en, lamb chops, beef steaks or
hamburgers. Or try the -following
“imported” method of serving bits
of meat on skewers. They are
known by various names, depend
ing on country of origin. “Skish-
kedabs,” “Shashlik,” or as the
Romanians say it, “Frigarui.” By
any name, all you need do is have
the filled skewers ready in the
refrigerator or freezer. Then pro
ceed as follows:
Broiled Kebabs
(Frigarui, you Rumanians!)
8 one-inch cubes of lean beef or
lamb per skewer
3 egg tomatoes cut in halves
7 pieces green pepper
1 teaspoonful vinegar
1 tablespoonful lemon juice
1 tablespoon sherry, optional
1 tablespoon dark brown sugar
A dash of cayenne, pepper or pa
prika
Papaya meat tenderizer, optional
Put the cubes of meat in the re
frigerator for an hour before ar
ranging them on metal or wood
en skewers for broiling. Place a
half tomato (cut through center
lengthwise) between pieces of
green pepper and meat cubes so
that meat cubes are first and last
on the skewer. Combine vinegar,
lemon juice, sherry, ,brown sugar
and seasoning to be used and
place the filled skewer in so that
it will be marinated on all sides
when turned several times. Let
stand in this marinade about one
hour in the refrigerator prefer
ably in a glass container. Dust
with papaya tenderizer if desired.
Broil till nicely browned on all
sides. Serve hot. Make as many
skewersful as servings required,
using the above proportions for
best results.
Spinach Cooler
1 package chopped frozen spin
ach (1-1/2 cupfuls fresh)
1/2 cup lemon juice (fresh, fro
zen or bottled)
Dark brown sugar to sweeten to
taste
1/2 teaspoon salt
3 cups cold water
6 tablespoons sourcream
6 sprigs fresh mint or parsley
Ice cubes as required
Combine the frozen or chopped
fresh spinach with lemon juice,
sugar, salt and cold water and
bring to a boil. Cool before refrig
erating for several hours. When
ready to serve, half-fill six tall
glasses with ice cubes and add

forthcoming Bar Mitzvah of
their son, Yankee, on Saturday,
August 27 in New Orleans. A
large number of out-of-town vis
itors are expected. Mrs. Wilen
sky is the former Bessie Geffen.

Atlanta have returned from a
Northern trip, spending some time
visiting Philadelphia, New York
and Boston.
Mr. and Mrs. Stanley Ulman
are vacationing at Miami Beach.

silver wedding anniversary at a
cocktail dinner party given at the
home of their brother and sister,

Rabbi Zalman A. Diskind of
Congregation Ohab Zakak, New
York City, will conduct services
at Shearith Israel Synagogue the
evening of Friday, Aug. 19, and
morning of Saturday, Aug. 20. The
public is invited.
Rabbi Diskin will give a sermon
Saturday morning. His current
Synagogue is the one served by
Cantor Josef Rosenblatt.
