As common sense dictates, it is
well to remember not to serve
thirst-producing food for the pre
fast meal on Erev Yom Klppur.
You should go the limit, however,
on pickles, olives, zippy condiments
and appetizers for the Yom Kippur
Night meal. Chopped Herring
Canapes or Chopped Liver (chick
en or beef) in tomato cups make
excellent meal starters. Pickled
Beets and-or Horseradish should
accompany the Fish Course wheth
er it be Gefilte Fish or other fa
vorite fish dish. Serve some of
the Eggplant Relish we suggested
in a previous column with warmed
roast chicken or turkey. Or,
weather permitting, serve the
chicken cold with a accompani
ment of the following:
APPLE & HORSERADISH RELISH
2 cups diced tart apples
I tablespoon prepared horse
radish (white)
1 teaspoon dark brown sugar
1 tablespoon salad oil t>r mayon
naise
A dash of salt
Combine the listed ingredients
and chill before serving with cold
meats. Garnish with bits of pars
ley or green pepper for color.
Serves 6 to 8.
NEAR EAST RELISH
1 large Bermuda onion (or the
yellow variety)
1 large green or red bell pepper
1 cup diced celery, leaves in
cluded
6 medium size potatoes, boiled
and peeled
hi teaspoon salt
4 tablespoons vinegar or 3 table
spoons lemon juice
2 tablespoons salad oil
Brown sugar to taste
Minced parsley or fresh dill for
garnish
Peel the onion and dice coarsley.
Remove stem and seeds from pep
per and cut into small pieces. Com
bine and chop fine in a wooden
bowl. Add the diced celery and
chop as fine as desired. Grate the
cold boiled potatoes into this mix
ture and combine with remaining
ingredients in the order listed.
Chill and serve when required.
Serves 6 to 8.
APRICOT NECTAR SHERBET
2-3 cup sugar
2 tablespoons honey
A dash of salt
2 12-ounce cans Apricot Nectar
V4 cup lemon juice
2 egg whites
Combine sugar, honey, salt and
about 2-3 cup of cold water in the
top of double boiler or other deep
pot. Bring to a boil, stirring only
till sugar is dissolved. Remove
from heat and cool by placing the

Luncheon Meeting and Card Party
at the home of Mrs. Abe Auerbach,
1731 Wildwood Rd., N. E., on Wed
nesday, Sept. 21, at 12:30 p.m.
Mrs. S. Goncher, president of the
chapter, urges all members and
friends to attend.
She said, “During the summer
all of our committees have met
and have worked untiringly ini
formulating interesting programs
for all our meetings. We invite
the Jewish women of the com
munity to participate.
"Our aim this year is to migrate
many hundreds of refugee children
from South Africa who are des
perately in need of a home and
medical care. In bringing them
to the Children’s Village of Ren-
anna, we know our mission will
be filled. They look to us in
America for help.”

stiff at room temperature and fold
into the chilled mixture. Pour Into
2 ice cube trays and partially
freeze to a mushy consistency. Re
move from trays to a chilled bowl
and beat with electric beater or by
hand till fluffy. Return to trays
and freeze overnight. This is an
easy dessert to prepare long In ad
vance of serving time on Yom Kip
pur Night. Serve in sherbet cups
and top with a maraschino cherry
or a sprig of fresh mint from the
garden. Pass some cookies or
Honey Cake Squares. Serves 8
to 10.

Marietta-built Hercules
over Georgia
This 0130 Hercules was built by Georgia workers at Gov
ernment Aircraft Plant Number 6 in Marietta, operated by
Lockheed’s Georgia Division. Built for the United States Ak
Force, the Hercules is a powerful turbo-propeller combat
cargo plane able to carry men and materiel farther and faster
at lower costs. The Hercules shown here is now in quantity
production in Marietta.
