They raised $200,000 in
1045; incorporated the At
lanta Jewish Community
Center three years later —
November of 1048 — when
they purchased the Peach
tree Road site where the
new building is now going-
up. The war years and
overseas needs took prior
ity, but the AJCC was “in
business.” Within the new
building foremost in mind,
outdoor facilities at the
site were developed, while
temporary quarters were
set up in the old mansion
on the grounds. In 1953
the architects laid down
the plans which are com
ing into being. Also in 1953
the capital funds program
was again initiated. At
present the community is
being called upon in a ser
ies of campaign efforts to
raise the balance of the
funds necessary for the
building.
In the excitement of
building a project of this
sort, most of the attention
tends to focus on what will
be in it and what it will
cost. Rut the “why” of
a Communtiy Center must
not be overlooked and this
is best epitomized in the
words of U. S. Senator
Herbert H. Lehman;
“Its goal is to foster de
mocratic and creative Jew
ish living within the frame
work and in the spirit of
American democratic tra
ditions. A vigorous force
for democracy, the Center
gives the American Jew
those enriching experi
ences which help make
bim a better Jew and a
better citizen and there
fore a happier and more
useful person.”
Thus, it is that Atlanta
looks forward to its new
Jewish Community Center
with a sense of pride to the
completion of its n e w
Jewish Community Center
in the summer of 1956.

FOODS TO REMEMBER

54th St., Savannah, Ga., came a
request for a good recipe for pick-
led fish. The following recipe has
been found especially helpful to
home-makers who like to be pre
pared for special guests on short
notice. This method of preparing
any firm fleshed fish that can be
fried and “pickled" is easy to fol
low, and just as easy on the bud
get. Try it and be convinced.
PICKLED FRIED FISH
3 pounds of fish fillets (any
variety—halibut, flounder,
etc.)
2 eggs
'» cup fine Matzo Meal (or bread
crumbs, cracker crumbs or
flour)
Salt and pepper to taste
Cut the fillets into serving por
tions. Salt lightly and let stand
in the refrigerator in a covered
container for at least one hour.
Rinse in cold water, wipe dry with
paper towels. Beat eggs lightly
Sprinkle some of the Matzo Meal
over fish and dip first into beaten
The Southern Israelite
eggs then in more Matzo Meal. Pat
each portion of fish with a paper
napkin. Sprinkle lightly with mix
ed salt and pepper, if desired. Fry
in deep hot shortening or any pre
ferred salad oil till nicely browned
on both sides. Let brown well be
fore turning for best results. Place
the fried fish in a crock or glass
dish. Cover with the following
Marinade and use after 48 hours.
This will keep for several weeks,
if appetites can be controlled.
FISH MARINADE
1 cup white or eider vinegar
3 tablespoons brown sugar
to x -> eup cold water
1 lemon, sliced thin
2 bay leaves
2 cloves
L, teaspoon mixed herbs or
oregano
Peppercorns, bits of red pepper,
optional
Combine vinegar, sugar, water
to taste, depending on strength of
vinegar. Bring to a bail. Pour
over the cooled fish in crock and
add sliced lemon and the other in
gredients for flavoring. Cover and
