It is the better part of wisdom
to plan a colorful Succoth either
at home or at Synagogue or Tem
ple for the week of Succoth, Feast
of Booths. If you cannot do either,
then do the next best thing—
make the dining room or alcove
in your apartment or home a
Booth of Willows, decorated with
all the colorful fruits and vege
tables available at this time of
the harvest season. Willow
branches can be obtained from
your nearby countryside, or buy
some branches at the flowershop.
Fasten bunches of green, red and
purple grapes as effectively as you
can. String some polished apples
together and hang from the ceil
ing in your favorite design.
Colorful green and yellow squash
may be added to the decorations.
Cranberries strung by the chil
dren can add to the festive look
of the whole “Booth.” A hollowed
out large pumpkin, lined with
aluminum foil and folded over
the rim can serve as the “horn
of plenty” when filled with
grapes, oranges, apples, bananas
to overflowing and placed as a
table centerpiece.
This colorful festival commemo
rates the first stopping place of
the Israelites on their flight from
Egypt according to Biblical ac
counts. It also is the festival of
the harvest, dear to the hearts of
our people everywhere, especially
in Israel. Make it unforgettable
in the minds and hearts of your
children. And remember the
‘‘stranger within the kates” by
inviting some service men and
young women far from their own
homes.
What to serve? Well, the food
associations of this holiday week
are many and varied. Holishkes
(Praakes or Galuptze) come first.
HOLISHKES
(Chopped meat in Cabbage
leaves)
2 pounds chopped lean beef
V\ oup uncooked brown or
white rice
2 eggs
1 large onion, grated
1 carrot, grated
Yz teaspoon salt
20 to 24 cabbage leaves (fairly
large size)
cup vinegar or Yi teaspoon
citric acid crystals (sour salt)
% cup dark brown sugar
1 cup canned thick tomato
sauce
Cold water to cover
Combine chopped meat, rice,
eggs, grated vegetables and salt
to taste. Let stand in the refriger
ator while preparing the cabbage
leaves for filling. Place cabbage
leaves in a deep pot or bowl and
add boiling hot water to cover.
Drain off the water. As soon as
cool enough to handle, place a
ball of the meat filling in the
center of each loaf in turn, roll
up, tucking in the ends or edges.
Place each rolled-up filled leaf
close to the next one in a large,
deep frying pan (the heavier the
better for the purpose). Or use
a rectangular roasting pan at
least 2% inches dedp. Combine
remaining ingredients, adding
enough water to cover Holiskes
in the pan. Cover and cook over
moderate heat 30 minutes then re
duce heat for the following 20
minutes. Uncover. Add more water
if necessary to prevent sticking,
and bake at 350 deg. F for about
20 minues or till nicely browned
on top. Turn each carefully to
brown the undersides if desired.
Thicken the gravy if served sepa
rately. Serves 10 to 12.
