Now that Springtime is here,
our thoughts turn to lighter,
springtime meals. We make a hur
ried search through recipe files,
handy cookbooks, clippings not
yet filed, etc. Naturally enough,
we search for something different
to please lagging appetites, and
are happy to come up with some
thing time-saving, especially for
luncheons.
How about utilizing some left
overs of meat, poultry or fish?
Dicing or flaking even small por
tions of meats or fish — boiled,
broiled or roasted — and com
bining with diced hard cooked
eggs and diced celery ribs and
leaves, green pepper, parsley and/
or fresh mint leaves, then blended
with French dressing or mayon
naise and a dash of herb season
ing, can come up as a very hasty-
tasty filling for scooped out to
matoes, green peppers cut length
wise (seeds removed, of course).
Or served on a bed of shredded
lettuce. Maslinas or green olives,
radish roses, with French Fries
or tiny biscuits, potato salad, -beet
salad or cole slaw with grated
raw carrots added — all of these
make excellent garnishes. Re
member to prepare fillings in ad
vance. Chill in the refrigerator
about an hour before using.
Here are a few suggestions v/e
have found helpful:
FLEISHIG AND PAREVE
FILLING
1:
1 cupful diced cooked meat,
poultry or fish
2 hard cooked eggs, diced or
chopped
Yi cupful diced green pepper,
celery or green onions
1 tablespoon Mayonnaise or
French Dressing
Herb seasoning (thyme, ore
gano) mint leaves or parsley
Salt and pepper or paprika to
taste
MILCHIG FILLINGS
1:
1 cup cottage cheese (creamed
or large curds)
Y cup cream cheese
Yv cup diced celery or green pep
per
Y* cup chopped nuts (walnuts,
almonds, hazel nuts)
Minced parsley and/or celery
leaves as desired
Salt and white pepper to taste
2 tablespoons sour cream
Combine with a fork as lightly
as possible just before filling,
scooped out tomatoes or green
peppers. Top with more sourcream
at table and sprinkle with minced
greens of any kind. Looks and
tastes good on chickory leaves,
escarole as well as lettuce.
2:
1 cup cottage cheese
Yi cup grated Cheddar Type
Cheese (your favorite kind)
Yi cup minced green celery
leaves and/or parsley
3 thin strips green pepper per
salad
Mayonnaise Dressing for top
ping—1 or 2 tablespoons each
serving
Lettuce Leaves or shredded
salad mixed greens
Combine in the order listed, the
first 4 ingredients. Chill about 1

canned small beets)
2 hard cooked eggs, diced or
chopped
1 cup grated Cheddar Type
Cheese (tightly packed for
measuring)
1 tablespoon chopped mixed
pickle relish
1 tablespoon French Dressing
or Mayonnaise - Sourcream
combination
Combine and use as green pep
per filling. Serve on lettuce.
Above recipes serve 3 to 4.

How about mixing up some
cornmeal muffins to go with
salads?
Here’s how:
QUICK CORNMEAL MUFFINS
2 cups yellow cornmeal
1-2/3 cups sifted all-purpose
flour
3 teaspoons baking powder
1 tablespoon salt
3 eggs
Y cup sugar (optional)
2 cups liquid (milk or water)
% cup melted vegetable short
ening or heated salad oil
Sift together cornmeal, flour,
baking powder and salt into a
mixing bowl. Beat eggs with
sugar, if used, till light lemon
colored? Add liquid used and stir
into the dry mixture. Stir in
heated shorening or oil and fill
well greased or paper-lined (use
fluted paper cups) 2-inch muffin
pans about 2/3 full and bake 20
minutes at 425 deg. F. or till
lightly browned on top. Serve hot
with butter, margarine or plain.
Yields about 18 muffins.

FROSTING FOR GINGER
FINGERS
Y\ cup butter
2 cups confectioners’ sugar
Y cup light cream
3 cups finely shredded and cut
coconut
Yt pound semi-sweet chocolate
1 tablespoon butter
Heat butter over low heat in a
saucepan till it is golden brown
then gradually stir in sifted con
fectioners’ sugar, cream and the
prepared finely cut coconut (use
a scissors for best results). Line
a cookie sheet with wax paper or
aluminum foil. As soon as the mix
ture is cool enough to hold its
shape when dropped from a tea
spoon, drop by spoonfuls onto the
prepared cookie sheet and shape
to peaks. Chill in the refrigerator
Ford Foundation
Grants $129,800
To Home For Aged
PHILADELPHIA, (JTA) — The
Ford Foundation has granted
$129,800 to the Home for Jewish
Aged here, it was announced by
Harry A. Robinson president of
the home which is one of the
agencies of the Philadelphia Fed
eration of Jewish Charities.
The funds will be used to fi
nance extensive research in ge
riatrics in cooperation with the
Albert Einstein Medical Center,
Mr. Robinson said. The award
brings the total of Ford Founda
tion grants to Philadephia Fed
eration of Jewish Charities
agencies to $693,000.

Synagogues Receive
$16,500 From
Restoration Fund
NEW HAVEN, Conn., (JTA) —
Efforts on behalf of the Syna
gogue Restoration Fund were cli
maxed here last week with the
distribution of 16,500 to flood-
damaged synagogues in the Con
necticut communities of Winsted,
Dutnam and Ansonia. The meet
ing at which the allocations were
made was -held at the Jewish
Community Council here.
Beth Israel Synagogue of Win
sted received $6,600 as did the
Sons of Zion Synagogue in Put
nam. The Ansonia Congregation
Sons of Israel was allocated $3,-
300. The meeting, which was at
tended by 25 persons, including
representatives of the three syna
gogues, also heard that any fu
ture contributions to the Fund
would be distributed on a 40-40-
20 basis, following the pattern of
the first distribution.
