Well, like the request from a de
voted reader in Rhode Island.
From Mrs. L. Decof of Woon
socket, R. I,, comes a request for
a chopped liver-filled “Potato
Puff” she recalls her mother used
to make. Here is a version of that
type of mouth-watering “puff”
or pancake which we have found
easy to make and serve with

POTATO DOUGH, Basic Recipe
1 cupful cooked-mashed potato
1 egg, beaten
Flour enough to make stiff
dough (about 1 cup)
Combine the mashed potato and
beaten egg in a mixing bowl and
sift in flour to make a stiff dough
which can be either rolled on a
floured board or moulded in the
palm of your hand. Flatten a ball
of dough the size desired, or make
a depression in the center and
place a ball of filling in. Bring
the potato dough up and around
filling, form into a flattened pan
cake or leave it in round or slight
ly elongated shape and bake on a
greased cookie sheet or pan at
350 deg. F. for 12 to 15 minutes
YMJ Cops Annual
Maccabiad for Boys
Young Men of Judaea won the
annual Maccabiad for boys at
the Atlanta Jewish Community
Center Sunday, May 20.
YMJ won three first places in
the six track and field events,
three second places and three
thirds for a total of 27 points.
Lions of Tel Chai was second
with a team total of 25 and Sons
of Zion scored one point.
Outsanding performance of the
games was turned in by Lane
Wolbe of YMJ who won the
basketball throw with a toss of
80 feet.

Chopped Liver Filling
(Broiled chicken, beef or calf’s
liver, put through the meat grind
er with hard cooked eggs, fried
onions and seasoned to taste.)
Sweet Fruit Fillings
May be made by using half of
a dried, fresh or canned apricot;
soaked and pitted prune; chopped
combinations of dried fruits and
nuts, sweetened to taste: or com
bine your favorite preserves with
cake or cracker crumbs, with or
without chopped nuts, and use as
filling. These fruit filjed “puffs
or pancakes” may be served with
a topping or fruit sauce to match
the filling, as a dessert dish.
This recipe makes 3 to 4 filled
“puffs,” depending on size.
